Usually I end up deep frying them I was just curious what other ways people like to cook/eat them

A healthier(not tastier) way is McCormick Oven Fry mix which works well .

Just did up some big ones last night. Can't go wrong with rolling them in flour, then egg wash, then a mix of bread crumbs and corn flour. Fry them in canola oil on medium high. Soooo goood.

I have a bunch of 4-5" ones that I was debating what to do with.....can't go wrong with the norm but always looking for something new to try

Gotcha. Well my buddy in the NEK dehydrates them somehow and makes them into a crunchy Japanese style treat. Pretty good stuff actually. I also wonder if they can be pickled somehow... I mean, if they can pickle pig's feet...

Never tried it, but beeing that they are a type of salmon gotta imagine smoking them could be pretty good.

I have done both pickled and canned (like sardines) using a pressure cooker/canner. Both came out really well, but frying is still the fastest and easiest (and probably tastiest) way. I have found that previously frozen smelt taste horrible. They have to be dealt with fresh IMO.

I have never tried this but I suppose if you were to dry them out real good and roll them in a couple papers (kinda be like a real big fattie) you could probably smoke 'em :afro:

Good to know, I actually have a package of frozen smelt that was given to me last year. I guess I'll put them out for the blue jays to peck at.

Well for freezing smelt so they don't get freezer burnt or taste bad.... put water in the bag with the smelt that way the freezer burn can't get to them through the water

I wonder if you could can them and have them come out like the anchovies they have on Cesar salads in the fancy restaurants. Not the salty dark ones. but the light colored slightly pickled ones. wonder if they would taste the same. ????

I was the thinking more of a few hours over some apple wood chips until you had some died smelt snacks. I guess you could roll them into a fatty after, but would think water filtration might be better 😂

Last time I was in Texas they had deep fried butter sticks, I kid you not!
The funny part is that everybody watches the newbies eat them, because there's actually nothing inside the breading- the butter has all melted away. The breading is excellent though, nice and crispy.
