smoked salmon jalapenos
« on: Dec 14, 2014, 10:59 AM »
This is a recipe I got out of a fishing mag. a couple years back.

1- 8 ounce package cream cheese
1 cup flaked smoked salmon
1 scallion minced fine
1 tsp. paprika
1 tbsp. lemon juice
pepper to taste
around one pound large jalapenos

Bring the cheese to room temp. combine cheese, salmon, scallions, paprika, lemon juice, and pepper. cut peppers in half lengthwise.
Remove seeds, the more ribs you remove the milder the pepper will be. Stuff the peppers with the mix.
Bake @ 350 deg. for around 40 to 45 min.

I've made some smoked cheese filled ones on the grill ...used a special rack and different cheeses ...but that salmon brings something to the party .. fatter jalapenos are easier to fill ...used a food storage bag with the tip cut off to fill them up .
