Recipe question - Ceviche

Home from first trip and have read some recipes on Ceviche but wondering do you need to freeze the fish first ??

looking to try with Walleye and some perch

also interested if anyone has a god recipe or links

freshwater fish should be froze first to conk out any parasites.

Not just frozen, but frozen at 0 degrees for 24 hours. Most home freezers are not capable of that.

You cannot kill parasites with any home freezer on the market today.

Be careful, my buddy got some bad "but I froze it for two weeks" ceviche.  Took him months and several doctors to get right.

If you are going to eat it raw only use commercially frozen fish.  Otherwise you could end up crappin through a 50 mesh screen for a month or two...

True for fridge/freezer combo but most plain freezers are capable of below zero. The first craptastic Walmart chest freezer I clicked on goes to -9.4°F.

Whether that is adequate to kill parasites is another argument.
