1 that is use all the time is, Drakes coating mix, i use it dry, and add some cajun seasoning to it with some black pepper, then deep fry, till the fillets float and get a light golden brown, and they are ready for the table.
ENJOY !!

Here's a great panfish recipe:

catch fish
gut and skin fish
fry
eat

Repeat as necessary

The employment of effort, hard work, time, and energy put in locating fish will offend noone.

I do the same only I deep fry them. Try making a sauce with dill relish and mayo.

Really?  Most people in Indiana think that perch are fantastic eating.

In reading other posts on the Shanty I've noticed that a lot of people from New England don't eat bluegill.  This also amazes me!

If you are ever down around northern indiana i will cook some fish for you. You don't know what your missing. Perch and gills are awesome. I had a fish fry last Sat. and cooked about 300+ fillets for about 15 people and there
wasn't a single fillet left.

Shorelunch regular or cajun.....

dip moist fillets in mix.....I sometimes dip them in milk first or just the natural moisture on the fillet works

fry in hot peanut oil for a few minutes.

eat

Mainehazmt,

What kind of fish do you keep? Other than eagle food?
