anybody have a good recipe for fish breading.

crushed saltine crackers, with small amount of Italian bread crumbs, dip fish in favorite beer, bread them, throw them in deep fryer. awesome

try the product fish crisp.  i use it now - exclusively.  there are several different flavors.  very good, and easy

If you want to make the ultimate fried fish here is what you have to do:
Coat fillets with all purpose flour seasoned with salt and black pepper
Next place in mixture of  1 egg to 1Tbls of light cream
Then coat with Italian seasoned bread crumbs that has parmesan cheese.
Deep fry at 365 degrees F until golden brown.
The added step of flour coating makes the fish extra crispy. MMMMMMM  ;D
If you want more flavor to your fish  add 2 Tbls of old bay seasoning to the flour instead of salt and pepper, but then you have to use plain bread crumbs.  ;)

This one really sounds good. I just can't bring myself to use breading on Perch,most any other fish tough.

I tried some crushed goldfish crackers the other day on some pike filets.  It turned out pretty good.  Gave it a nice cheddar flavor.

I agree.  this is pretty close to what I use as well.  You may want to add a few tablespoons of crushed almonds or pecans as well.  Very nice, delicate flavor and a bit more to crunch on.  I like the Old Bay as well. 
Now for something a bit different, marinade your fillets in Claude's Sauce for about 15 minutes prior to frying.  Or instead of frying, cook them on a sheet of heavy aluminum foil on a VERY hot grill for only a few minutes.  I do this will halibut and salmon more often than not.  Divine. 

Good advice there Mr Scientist!  And who says nothing good comes out of Jersey :whistle:  (I was born in north jersey - Pompton Plains - so I feel your pain...)

"Shore Lunch" makes a good breading but i havent seen it since moving east...

I usually buy the can of bread crumbs and add my homemade cajun seasoning to it...

fish>egg>breading>HOT shortening and butter mix....so hot its almost smoking....you should have to flip the first filet you put in by the time you lay the last one in....30 seconds or so on each side....this way you hget a nice brown crisp and you dont have to cook the inside to high hell....

Its also important to let the fish and eggs get down close to room temp before doing this...cold fish and egg into hot oil drops the temp fast and slows the cooking

I was introduced to House Autry breadding by a friend and so far I have yet to find an already prepared breadding that will beat it .

  Aunt Jemimahs Pancake mix. Wet fish in milk, coat with mix and fry..... Try it you will like it. It works really good on clams just don't use milk.

coat fish in flour, dip in some franks hot sauce or some other hot sauce of your choice, then into a mix of about 2/3 flour & 1/3 cornmeal (add cornmeal for personal preference, more if you want it crunchier).  Nice crispy and tasty.

or egg insead of hotsauce, (I like to season the egg with salt and pepper), then into flour/cornmeal mix with italian seasoning, garlic and/or seasoing salt, and pepper.

Thats my fav way to top it off too, it is the perfect combo of flavors, even if some people say it ruins the flavor of the fish, I say it compliments it.

but season the butter with cayan spice, lots
all most red butter, fry it up, nothing else.
Man u dont need anything else, the taste
is so intense but perfect!

For a quick and simple crunch, just grab your favourite crouton, crush them down to bread crumb consistancy, they will have more flavour then any bread crumb you can buy and you wont have to add anything....do your normal flour and egg dip, i add Frank;s red hot with lime it adds a little extra flavour.

I use dry buttermilk pancake batter, mixed with Tony Chacherres Herb's and Spices, a little garlic salt and some Lowry's.  Put it in a rubbermaid container with a tight lid, toss my fish in it, put the lid back on and shake it really good.

Drakes batter mix.  The bag with the duck on it from marshal MI.  Soak fillets in milk and dust in mix or mix with beer to form batter.  Then fry, I use a cast skillet or an electric skillet for better temp control.

Quick and easy:


Dredge fish filet in seasoned flour
Dip filets in egg wash
Coat filet with "panko" breadcrumbs

Fry in 375 degree oil until brown.

Serve with tarter sauce and watch out!!

"panko: are japanese breadcrumbs found in any grocery store

if it is just for me i will use crushed saltines, if i am doing it for a party or something i like to use Andy's Red seasoning.

I like Fish Dipt in the cajun flavor w/ a little old bay thrown in.  I marinate the filets in a little beer before the egg/flour/breading.  Squeeze a little lemon on top (after pan frying in peanut oil) or a dab of franks.  I usually fry up perch (or eye if i get lucky) and make mac n' cheese for a side dish.

dash of dill weed
dip fish
dredge in Instant Mashed Potato Flakes
deep fry till light golden brown
