Tony- I have the recipe saved. Gonna try it for lunch. I LOVE MY SHOWDOWN!!!!!!!!! Drilled 4 holes, got a mark and dropped in a smelt. 10 minutes later I pulled up that laker. Got a few more flags and my knot failed on one fish. But a good day. I found that spot using my Iphone with the Navionics App.
Scott- Those are Lacrosse Alpha Burly 1500's. They have been fantastic boots.
The best thing is I was able to do some work while I was fishing! Did some shoveling and a little repair work on a house 100 yards away

1 Fillet for lunch. Dredged in cajun spiced flour, egg wash, then Panko crumbs with chili powder. Fried up and viola! Good lunch

Great job fishing & cooking NHSC.  I also tried a new spot today.  Lost a laker at the hole  :( and that was it for 6 hrs.

man that looks too good.  Quick question(s).....do you dredge in the cajun flour first then dip in egg wash or to do you dip in egg was then cajun flour?  also do you pan fry or deep fry.  thanks

Rinse, pat dry. Dredge in flour mix, egg wash, then panko. Let it rest for a minute, I think it helps make a nice crust. Then I pan fry in about 1/2 inch of oil using a cast iron pan. The cast pan holds heat better, keeping the batter from getting too soggy. One of my favorite batters to use. Add some chili powder or pepper flakes to kick it up a bit. Putting the spices in the first dredge keeps them from burning.

Frying in oil is great but for those who want it a bit lighter I will bake the fish.  the order is the same of flour egg wash then panko, but I will toss the panko with a bit of oil just to get them slightly moist.  lay out the fillets on a cooling rack on top of a cookie sheet that way the heat gets to the entire fillet making a nice and crusty outer layer without a lot of oil.  Don't forget to spray the cooling rack with pam.
