hey, everybody.  i'm looking for different (healthier) ways to cook fish.  i primarily eat perch, walleye, and gills, and i only fry them.  i havent cooked northern pike yet cause i'm not sure how to fillet them (bones) but i'd like to hear any recipe idea.   i'm trying to cut back on cooking oils.  i have a family history of heart problems.    any tips or ideas are very appreciative.   i also have one salmon and one trout in my freezer and i'm not sure exactly how to cook them. i know you smoke them, and it is good.  i'm no bobby flay and i'm not asking for secret recipes, i'd just like to widen my cuisine options.    thanks for your time and be safe on the ice!!!!!!  ;D

bread them, and bake on a non-stick sheet pan, or use Pam. you can also cook them on some foil on an outdoor grill. i like thai chili sauce on the fillets!

you can also steam them, or wrap in a foil pouch. You have to use fresh natural ingredients to add flavour when using these methods, citrus, dill, other herbs

I have cooked fish in foil before and its easy and good,we use peppers and onions salt pepper garlic powder and sometimes a little dill

Try baking them with salsa topping. These happen to be walleye fillets, but this works with any fish.

Brush dry fillets with olive oil and garlic (I infuse a small bottle of olive with a bunch of garlic cloves for "Garlic Oil" )

Top with your favorite salsa
Sprinkle with shredded Asiago, Parm or Romano cheese....or all of them ;D

Bake at 400 till tender.......don't over cook it!

Another of my favorites is;
place a layer of dry fillets in a micro wave safe dish
top with ;
Franks Red Hot
Wishbone Italian
Lemon juice
salt
pepper
several dots of butter
Parm or Asiago or Romano ( or all)

Cover tight with plastic wrap (poke a small hole)
Nuke for 5 minutes or so then let sit for 3-4 minutes.


Serve over Rice.

Guaranteed Awesome...delicious... fast...easy to modify.

that recipe looks like another good one, my only question is  ....  wouldn't the microwave toughen up the fillets?  i'm gonna try this one too cause i love franks hot sauce ;D

onion, garlic, salt, pepper, lemon juice and a smathering of mayo...all wrapped up in foil and onto the bbq or in the oven. supreme w/ the white meats, as for the salmon/trout smokers the only way to go imo.

Covered they don't get tough at all. Just experiment a bit.

i bake most of my fish. Glass dish, little butter, and onion. Then add a little Tarter.  I pickle most of the pike i catch, bones dissolve.  If not i boil them and make some poor mans lobster.

'200s', i did not know that about the pickled pike about how the bones dissolve,  thats something else i'd have to look into.... is pickling pike another healthy option???    when you said you boil them. did that include pike? if so, do the bones fall out as you boil them???  pike is the only fish i don't know how to fillet..... thanks :)

Lil Crow baken Miracle ( I add a little more pepper), some extra virgin olive oil on a cookie sheet (Ive found that olive oil gives everything a better taste). Before my high risk bypass I loved my fried fish, but fried isnt to good for the heart anymore so I bake everything. I love baked fish yummmy.

I only boil Pike. Doesn't dissolve the bones. There are a couple of ways to fillet a pike and get all the bones out. hard to explain. I would go to youtube. There are a couple of videos that show you how to do it. After that cut into smaller pieces and then boil. Little melted butter to dip in. It is awesome! Defiantly try a pickling recipe also. The bones will dissolve and it is also very good. Health, I couldn't say for sure, but I don't see why not.

Pickling is OK health wise if you aren't on a salt restricted diet.

Funny, I just said to my wife..."I need to pickle some fish"  ;D

Man I live pickled fish.

Have you guys ever tried a Perch Lasagna? I have a recipe somewhere....I'll dig it up.

I found this one too....MMmmmmmm!

Ranch Casserole;
In a small casserole;
Layer of perch fillets
spread lightly with low fat Ranch dressing
sprinkle with seasoned Italian bread crumbs

repeat for 3 layers

bake covered at 350 for 45minutes
remove cover and sprinkle with Parmesan cheese....bake another 15min or the cheese starts to brown

Let set for 15-20 minutes and serve.

Found it ;D

Perch Lasagna; This is soooooo good you won't believe it.


1  lb perch fillets rinsed and drained
1 package lasagna noodles
1 large egg, beaten
2 cups whole milk ricotta cheese
1 cup  grated Parmesan cheese
1 teaspoon dried basil
1 cup sliced fresh mushrooms
2 green onions, diced
3 tablespoons butter
3 tablespoons flour
Salt to taste
1/2 teaspoon white pepper
1 1/3 cups milk
1/2 cup sour cream
1 (8-ounce) package shredded  whole milk mozzarella cheese

 
Cook lasagna noodles according to package directions. Drain; rinse with cold water and drain

Combine egg, ricotta, half of the Parmesan cheese and the basil. Set aside.
 
For sauce;
cook mushrooms and green onions in butter until tender. Stir in flour, salt and pepper. add milk all at once. Cook and stir until thickened and bubbly. Remove from heat. Stir about 1 cup of the hot mixture into the sour cream; return all of the sour cream mixture to the saucepan.

To assemble;
layer the cooked noodles in a 11 x 7 x 2-inch baking dish.
Spread with half of the filling.
cover filling with perch fillets.
Top with half of the sauce and half of the mozzarella cheese.

Repeat layers. Sprinkle with the remaining Parmesan cheese.

Bake in a 375* oven for 40 to 45 minutes or until fish is cooked through
Let stand 15 minutes before serving

I like to add some vegetables like blanched broccoli, asparagus, baby spinach etc.

You can substitute low fat anything in this recipe.

Man that made me hungry.

Foil dinner with perch sounds great. I have to get out and get some more perch.
Take a kid fishing,they make great pack mules.
Put the big ones back for another day eat the small ones.

 yo, rgfixit!!  :bow: :bow:   when's dinner?? ;D    you might get a call from bobby flay for a SHOWDOWN!!!  :flex:...            all you guys that left a post, thank you so much,  keep it up :thumbsup:   ...... now this is a stupid question that i may already know the answer to, but--- is poor-man's shrimp just a simple boil the water and throw the fillets in? is there some kind of ingrediants to put in the water for some flavor??

If you are talking about the poor mans lobster. I only use pike for this. Completely debone. Cut into bite size chunks. Then boil until meat is cooked. I personaly dont add any think else. Then melt a little butter to dip in, and thats it.

Add sea salt and Old bay to the boil...at least I do. Really chill them fast. I use a bowl of ice water. A touch more sea salt before serving...Mmmmmm!

Cookie sheet lined with tin foil.
Smear small amount of oil on tin foil.
Pat dry any fillet and lay in pan.
Lightly salt and pepper and old bay seasoning on fillets.
Very lightly drizzle small amount of olive oil on each fillet.
Broil until fillets flakes start to open.
Eat!

In my opinion, fried is usually the tastiest way to prepare fish, but a lot of these other recipes sound pretty good.  Breading and baking can be good, but never quite as good as the fried version.  When I am counting calories, I pan fry them:

Take fillets, and pat dry.  Shake them in a bag of lightly seasoned flour or pancake mix, then shake off excess.  You want the lightest coating.  Pan fry in a non-stick pan, you can either use some non-stick spray, or just add a tablespoon of olive oil and wipe the pan with a paper towel.  I'll even use a 1/2 tablespoon of butter (50 calories), just make sure not to heat the pan too high or the butter will burn.  You get the crispy crust and flavor of fried, without a lot of the added grease, or calories from a ton of breading.  Plus, you actuall TASTE the FISH!

     To tell you the truth, I prefer the K.I.S.S. recipe!! This is BASIC and good! I'm going to warn you in advance that this is very simple and easy. Ready?  Preheat a CAST IRON skillet over medium heat with a "bit" of canola oil. Enough to cover the bottom of the pan, but not deep. We're pan frying, not deep frying!! Season your fillets with your choice of seasonings. I like  lemon pepper and/or Old Bay seasoning. Put fillets in the hot pan with a screen cover to keep from getting splatter everywhere. Fry until nice and brown and flip until both sides are a nice rich, deep brown. Don't overcook!!! Drain and enjoy!!
     Nowhere did I mention flour, eggs, milk, or anything but seasoning. All you get in each bite is fish!! Looks like fish, tastes like fish, and that's all it is. FISH!! Well K.I.S.S. my @$$, that was easy!!! :woot:

I've been working on a perch breakfast sausage. It's getting there...I'll let you know after I get my next order of casings ;D

How bout some Perch Patties ;D


I use a small Black and Decker food processor and I use boneless fillets.

Chop boneless fillets in food processor
add whole egg
crushed crackers
salt,pepper, cayenne pepper, Parmesan cheese, parsley
blend in processor

Remove and form patties
dip patty in seasoned bread crumbs and pan fry til golden brown on each side
Sprinkle with additional Parmesan after turning

The patties you're looking at were perch....but the recipe works! Period!

Try them with Dill Sauce;
# 1/4 cup mayonnaise
# 1/4 cup sour cream or 1/4 cup plain yogurt
# 1/2 teaspoon dill weed
# 1 1/2 teaspoons lemon juice

Combine ingredients thoroughly and refrigerate.

Another (my favorite) Lemon Herb Sauce
# 1/2 cup light mayonnaise
# 1/8 cup fresh parsley, chopped
# 1/8 cup fresh cilantro, chopped
# 1 tablespoon Dijon mustard
# 1 tablespoon fresh lemon juice, plus lemon wedges for serving
# 2 teaspoons prepared white horseradish.....the better the horseradish...the better the sauce ;D

Combine ingredients thoroughly and refrigerate.

Fried is great, but life's too short for bad bourbon and just fried fish ;D
