Title: Ham Salad

Someone once said the definition of eternity is two people and a ham.

Here at La Casa del Whacko in beautiful downtown Spring, TX, just across the sewage canal from the creosote plant, I'm beginnin' to think that's right.  So, after xmas ham, leftover ham, ham for breakfast, ham for lunch, ham for dinner, and a huge pot of bean soup I"m down to the last lb... of ham.

So, ham salad.

1 lb cooked ham cut in chunks
2 or 3 hard boiled eggs
2 Tblspns spicey brown mustard
1/2 cup mayo
1/2 cup sweet pickle relish
1 Tblspn Worchestershire Sauce
1/2 tsp ground black pepper
1/2 c chopped green olives
Cajun or Creole NO SALT seasoning to your taste
As many shakes of Cajun Chef Hot Sauce as you like
Anything else you wanna put in.

Grind the ham & eggs through a medium plate or chop up in a food processor.  Mix the rest of the ingredients into the grind.  Adjust all ingredients to your liking.  Serve as a spread on sandwiches or as a dip with crackers.  Enjoy

that sounds like just the ticket.   Will have to try it and report back.   Thanks for the tip.

I like to add a few drops of liquid smoke to mine, and I use dill relish. Can't do the green olives in it, though.  :)
