Title: New Year's Eve Minnysoda Caviar

My recipe for Texas Caviar...took quite a few tries over the years to get it just right... ::) enjoy!   ;D


        Reb’s Minnesota Caviar

1 can black eyed peas, rinsed & drained
1 can black beans, rinsed & drained
½ can (or small can) shoepeg corn, drained
1 large green pepper, chopped
1 large red pepper, chopped
1 large purple onion, chopped
1 Jalapeno, seeded and chopped
1 10 oz can of Rotel Tomatoes with Chiles, drained

Combine all veggies in a large bowl, pour ½ to ¾ cup of light oil over veggies.
(Canola, Wesson, etc)

Vinegar mix:
½ cup red wine vinegar
½ cup of white vinegar
½ cup sugar, mix and heat until sugar is completely dissolved. Let cool to room temp.

Add to vinegar mix:
½ tsp Chipotle chile powder
1 tsp salt ¾ tsp cumin
½ tsp cilantro
½ tsp garlic powder
½ tsp fresh cracked black pepper
1 tsp green tabasco sauce

Pour Vinegar mix over veggies, stir, and refrigerate at least 6-8 hours.
Garnish witth chopped Cilantro; serve with Tostitos scoops.

Seriously though, it's got lots different stuff in it than I'm used to in a caviar recipe but all sounds good. I am intrigued...

Gonna have to whip up a batch just to sample it. Of course, I always follow a recipe. I can always add a little "extra" to a side dish so's I don't pollute the regular stuff for "polite company".

Maybe ya could parcel out 20 different servings, each with different or added ingrediants, a selction of chips, various craft beers, and assorted varieties of El Puffo cigars for a real wing-ding culinary blast.

Nah! That's just bogus. I like everyone's different recipes and takes and relish the opportunity to sample. As far as my predilection for heat, that's a personal preference and there's not too much in life that doesn't benefit from some extra chilis. Like tonight's stuffed red peppers. Even Cheerios...  ::)

FWIW, I am making this with wings and slaw tomorrow night. By the book... Like I said. Guaranteed I'll have some fresh sliced habbies on the side though. Just because.  ;)2

Looks like the Caviar did him in...or too much tequila and he backed into the table saw.... :pinch:

Last night I made Reb's recipe and followed it to a "T". The wife and I had some at lunch today and I have to say that we both thought it was great! The best ever!
