I'm fishing in about 8 feet of water, ice thickness 30"
My question is at what depth would you guys set the line?

Probably a foot or two off bottom.

8 fow id have them all over, couple on the bottom couple halfway down, 1 right under the ice about a foot and half down,


And really it depends whats on the bottom,  silt,  rocks,  weeds..... rock bottoms stick right on the bottom,  silt hang em up,  weeds , just over them

All the pike I've caught on a tip-up this year have been in 5' of water and the bait 2' to 3' under the ice. When jigging in 8' of water I've seen and caught them from 1' off the bottom to 4'
under the ice.

8 foot water relatively clear the entire water column should be fine. If weedy I always go just above them, if a pike can either see or feel the vibration of of the bait, they will get it.

If weeds allow try setting a tip-up in where there's only a couple of feet between the ice and bottom.
