pig roast and turkey for 200
« on: Feb 17, 2010, 09:53 PM »
Guys I'm helping a friend  plan a pig roast
with Turkey for 200 people

Anyone have any idea how many Turkeys (what weight Turkeys) to cook
and how many pigs (They can not go over 100# Each)

If it was by it self Id go 1# per person dressed weight
of raw Pig or Turkey but with both I have no idea

Their will be sides but we dont have to do them

Just helping a fellow ice fisherman out

Thanks

I'm no caterer, but I've had a few shin digs.... ;D

I'm not sure how you're planning to cook the pig...
If you could fit one 140-150# bone-in hog in the cooker or on the spit, that would be enough if you had turkeys too.

If a pig this size is too big for your cooker, go with (2) 80#-100# pigs, or have the bigger pig (150#) de-boned & cook it in roaster pans, in the cooker (can't do this with a spit)
....this is a good method if you don't want all the work of cutting up the pigs when they're done cooking...in the middle of the party...burning your fingers...with everyone waiting to eat....like I said, de-boned & cooked in pans is my favorite way....easier on you.

I never had turkeys at mine....I'm a pork kinda guy  :P
I'd go with 5 good sized turkeys (15-20#?) not sure what fits in a fryer?
Along with the pork previously mentioned plus the sides I'd assume everyone is bringing, you'll have plenty of food......

...now for the drink.... ;) ;D

I have a roaster made from a 250 gal tank and electric spit
to do a pig on. I have cooked up to 125# on it.
I dont want to go to big because it takes to long
and I dont know if my roaster can do a bigger pig.

I just ordered a La Caja China. Also called a Cajan Microwave
It should work great to cook a second pig. I can only do
up to 100 # pig in it. It. It is a wood box lined with Aluminum
and has a metal top that you put the coals on.
The box heats to about 375 deg and cookes the pig.
100 # you take the head off and Butterfly it. We are thinking
about building a second China Box to cook the Turkeys in
We can get 6 Turkeys in one box. We were also thinking about Garbage can cooking the birds. That would take 6 cans

I was thinking about 2 pigs 80-100 # and about 6 birds 15-20 # Ea

Let me say thanks Because it kind of confirms our thinking

Yup, looks like you got 'er figured out....when do we eat??  ;D

I just googled cajun microwaves. Looks like a good idea, might make one.
Does the meat stay moist/juicy? How do you keep it from drying out?

I have not used one yet.
Just got it on order. I found it on a BBQ forum
and googled it
Looked at a lot of postes
They say it is moist. Kind of steaming the pig.

Then it crisps the last 40 min

I was think it would be not be hard to make
The top would be a problem

It looks like an easey and Cheap way to cook a pig

I also want to do a clambake with it this summer
I think Just add a cup of Water and it should steam
real good. Put a pottato, lobster, clams, corn, onion in a
cheese cloth bag. Put in the Box add a cup of water in the
bottom and light it up for about 45 min
should steam real good
