already got sap huh??  i thought about it the other day when it was like 40 here in wisconsin,  but we're still in the 10's and 20's every other week so i'm holding off.  it's hard though.  had a good first year last year...kind of made it a neighborhood affair with everyone coming out for cookout.  drank a lot of beer last year and had quite a bit of good food with it.   and in the end 4 gal. of sweet stuff!

I'm going to put a couple 'test taps' in today, but thinking I'll hold off at least another week to really get going.  Still thinking it's early.  Who knows though with the way this winter has been!

It's not early... the trees in my yard are pizzzin sap out all over everything... I hate this time of year... I almost got stuck to my trailer yesterday from all the sap....

i dont have a clue what im doing this is my second year doing it, but looking at the forcast and the way this year is going the trees are going to bud out earlier. so im trying the early  aproach

With no snowpack, I'd say insulated drink coolers and don't let it sit to long before boiling, it spoils just like milk.

last year i took some 2" foam board left over from the ice house and just made a 4x4 meat locker next to the cooker.  last year i could just shovel snow into it...this year i'm thinking ice in an ice cream bucket from my freezer everyday.

i know it's early but i tapped 8 trees and is getting some sap. just wondering if anyone else is tapping yet. my first question is what would make a good evaporation pan and where can i pick somthing like it up, i want to try wood this year.thanks ;D

we been getting 40 gal a day and cook over wood and then finish with gas. i just got my sheet metal guy to cut me up some ss sheets and welded em together.

My uncle has been tapping for a week or more now and he is up in the Garland/Dexter area. This year is way ahead of schedule.

The two 'test taps' I put out last week haven't done squat yet, but I probably have the rest in by the end of the weekend. 

cmstearns - see if you can pick up a hotel pan/steam pan/buffet pan (4 - 6" deep).  I got mine at cooking supply place in Winthrop (Caprera's?), but they have them at Sam's Club too.

taped 12 trees today and it was running strong! this early spring caught me off guard, have to make some modifications to my boiling pan/ wood stove but I'll get her done and it will be better than ever!

Have 11 taps going here in Freeport...off to a bit of a slow start, but the syrup is a nice dark amber.

Ready or not, here comes the sap. One trick for storing sap is to be sure and dump in all the ice from the sap buckets.  Also if your just starting out try and get a good sized pan that way you can flood your pan to the top with sap fill your stove with wood and go to bed/work.  I use this method and am able to cook down about 30 gallons a night and only have to get up once or twice to reload and flood pans.  I do the same during the day before work / lunchtime swing home and reload. Have fun.

I taped 4 more trees today and allmost had a steady stream of sap coming out one of them, I have never seen a tree drip so fast! :o
