MEZZOGIORNO

This almost authentic Mezzogiorno recipe has been a family favorite for years.

What you will need:

1 pound of hot Italian sausage.
1 pound box of penne pasta.
1 bunch of kale.
8oz of Italian cheese blend.
1/4 cup of garlic infused olive oil.(Store bought or Homemade)



Start a large pot with 1 gallon of water on high, to cook the pasta.



Trim the main stem out of the kale with a sharp knife and discard.
Give it a rough chop so the pieces are about the size of a silver dollar.
Set aside.


Brown the sausage until done.


Place the kale on top of the sausage, remove from heat, cover and set a side.


When the pasta is done drain but don't rinse.
Add the meat and kale to the pot you used to boil the pasta.
Cook over low heat until kale is tender.


Add the drained but still hot pasta back on top of the kale and sausage.
Drizzle the garlic infused olive oil over the drained pasta.


Add about half the cheese and mix together.
Add the other half and mix again.


Add a little more cheese when serving.
Salt and pepper to taste.
Enjoy!
