« on: Dec 27, 2012, 06:59 PM »
It's that time of year again and I am looking for ideas for food for the day. Let's hear your ideas and keep em easy. The Badgers are playing on New Years day and I need to be drinking not in the kitchen cooking.

Easy and delicious... 1 block of cream cheese on a plate and pour a bottle of cocktail sauce over it. Get a can of shredded crab meat and sprinkle the crab over the cream cheese n' cocktail sauce. We usually eat it with wheat thin crackers.

Enjoy!

BBQ'd Lit'l Smokies

1 pkg Hillshire Frams Lit'l Smokies (NOT the beef ones)
BBQ sauce
Chili or cocktail sauce
Liquid smoke
Bourbon
Red pepper or chipotle powder

I grab a pkg of Hillshire Farms Lit'l Smokies sausage, take a cup or two of your favorite BBQ sauce, add some chili or cocktail sauce to it to taste, a shot of bourbon or whiskey, and some red pepper flakes or smoked chipotle powder, and some liquid Hickory Smoke. Blend well. Pour over smokies in a fondue pot (doesn't everyone have one of those?) and let it LOW simmer (barely) uncovered,  all day while ya snack... :P

Easy one....

1 pkg cheese tortellini
1 can whole ripe olives
1 pkg sliced pepperoni
1 btl Italian salad dressing

Cook tortellini according to directions on pkg.
Rinse under cold water until they are pretty cold.
Put in bowl and pour in Italian dressing. Allow to marinate at least 1 hour. (longer is better)
Put 1 tortelinni on a toothpick, then an olive and then a pepperoni.

Pick them up and eat!!! Will last a few days in the fridge. I can eat a hundred of these things.
Born to fish, fish to live..... gotta drink something so it might as well be a cold beer!

I am doing wings.  Willdon some barbeque and some hot.  I will put a rub on them, cook them in the smoker,  then coat them in sauce and put them on direct heat on the grill for a cooked.on glaze,  then toss them in the sauce again. Awesome wings.  Doing some today to break in the newest smoker.

take 1 package of bacon, buy a couple boxes of long breadsticks.   cut bacon strips in half, wrap around breadsticks, roll bacon wrapped breadsticks in a mixture of brown sugar, pepper and chili powder.   Bake in oven until bacon is a crispy as you like, cool on a rack and enjoy with beer or beverage of your choice.

Here's another Little smokie's one I forgot about.....

Bacon Wrapped Little Smokies

1 lb. good smoked bacon
1 package of Lit'l Smokies (Hillshire Farms)
1 cup of Brown Sugar mixed with 1/2 tsp red pepper

Cut the slab of bacon into thirds so essentially you have 3 groups of 3" bacon strips. Wrap each Lil' Smokey in a bacon strip and secure with a toothpick. put them on a baking sheet and sprinkle the brown sugar over the top of them. I use about a cup but you can use more if you'd like. Bake at 350 deg until the bacon is crisp and the sugar is melted. The sugar will caramelize into a syrup and glaze each smokie.

Living in WI myself I thought almost everyone just did Johnsonville beer brats in a slow cooker with sauerkraut and onions on game day. Than just toss some sliced cheese and crackers and/or chips out to keep them entertained until halftime when the brats are ready.  This keeps it easy so everyone can watch the game!  ;)     GO BADGERS!!!

Lots of great ideas thanks gus. It would be nice to have Reb cook for us, he has a lot of cooking talent that I can not even begin to try to match. I mentioned the bacon wrapped tinie wienies and pickle wraps to the wife. Now she is making a grocery list and that stuff is on it. I kindof reserve the brats for summer and occasionally on the ice. So far it looks like homemade pizza, summer sausage, cheese, crackers, a dried beef cheese ball, bbq meatballs, bacon wrapped weinies, pickle wraps and something to drink. I am feeling bloated already. Keep the ideas comming. Thanks

Awww...thanks for the compliments, guys!!!  ;D Just for that, here's another great, easy one from a very good friend.....

Molly King's Sauerkraut Dip

Melt in a crockpot:

2 pkgs Philly cream cheese
8 oz container of sour cream
1/2 to 3/4 lb swiss cheese (I shred it up)
Add 4 pkgs Carl Budding Corned Beef (cut in small pieces) and 1 bag or 3/4 jar of drained sauerkraut

Cook on low and serve warm on your choice of crackers.

Dang!!!! Another one fell outta my recipe bin.....don't know how I forgot these, they go WAY to fast!!! I gotta stop making so much stuff... ;D

Bacon wrapped shrimp

30-45 large uncooked, peeled and deveined shrimp (Tiger prawns are even better)
15 strips smoked bacon, cut lengthwise
lemon juice
dill weed
garlic powder (if desired)
Toothpicks, soaked in water for about 5-10 mns.

Wash, peel and devein shrimp. Sprinkle lightly with lemon juice and dill weed, and a shake of garlic powder if desired. Wrap each shrimp with piece of bacon, skewer in place with toothpick. Place on lightly greased baking sheet, bake in oven at 375* for 10-15 minutes, or until bacon gets crispy. You can also broil for about 6-7 minutes, too.
Serve with chilled cocktail or chili sauce. Best to make plenty.... ::) ;D

PS....for a little extra "zing", scratch the dill weed and garlic powder, and use some cayenne or red pepper, or use a couple of drops of tabasco in lieu of the lemon juice.  :P

And the last one...I'm recipied out!!!!  :P  Gotta start making my own for tonight. Here's a "crowd size" dip I make in a 3-4 Qt crockpot.

Hot Crab Dip

2 pkgs ( 8 oz each) cream cheese, cut up and softened
1/4 to 1/2 cup whole milk or half and half
2 cans of drained crabmeat (6 1/2 oz each)  drained and flaked (or fresh cooked)
1/2 cup chopped green onions with tops
1 tsp horseradish
2 tsp Worcestershire sauce
1/2 tsp dill weed

Combine all ingredients in a well greased crockpot. (DO NOT use crock pot bag!) Cover and cook on high until cheese is melted and smooth, stirring occasionally.  Turn to low. May need to add milk to get to your desired consistency. Serve with your favorite crackers or toast rounds.

You can also substitute two 7 oz cans of minced clams instead of the crabmeat.

                                            ;D

My wings are out of the smoker, sauced and glazed, and in the oven waiting to go to the friends house.  Stuffed jalepenos are still on the smoker.
