Labor Day/End of Summer Grill Down

Here's what I'll be stuffing my face with this weekend....thought I'd share some of my favorite recipes. Enjoy!  Make sure your grill grates are greased well before cooking...



Hoppin' Jalapeno's

12-14 large, fresh Jalapeno's, seeded and sliced lengthwise (wear rubber gloves!)
8 oz cream cheese at room temp (not lite)
1 Tbsp good Cajun seasoning
1 tsp garlic powder
pinch of salt
12-14 slices of smoked reg cut (not thick) bacon
Toothpicks

Mix cream cheese, salt, Cajun seasoning, and garlic powder together. Fill each Jalepeno half with  cream chees mixture. Wrap with bacon slice and secure with toothpick. Place on med grill cook until bacon is done, about 10 minutes. Remove toothpicks before serving.

Reb's Ultra-cheesed Burgers

2 lbs of good 85/15 ground beef
1/4 cup chopped onion
2 Tbsp. Worcestershire sauce
Dash of Tabasco sauce
1 tsp garlic powder
1 tsp onion powder
1 tsp seasoned salt
1 Tbsp. coarse ground black pepper
6 oz blue cheese
Block of soft Havarti cheese, cut thin chunks or slices with cheese slicer or very sharp knife
Sharp cheddar cheese slices
Fresh tomato slices
6 sesame seed hamburger buns, buttered and toasted on grill

Combine hamburger with all ingredients except cheese, divide into 6 portions. Do NOT overmix burger! Poke equal amounts of blue cheese into center of burger and form into patties.
Grill over med heat on grill. Place slices of Havarti on burger, place cheddar on top during last minute of grilling. Shut heat off and keep lid closed until cheese is melting. Pull off grill and
place on toasted bun, topping with tomato slices.

Reb's 'Cukes 'n Sauce


1 very large cucumber, peeled and sliced very thin
1 medium purple onion, sliced thin
1/2 cup Miracle Whip (not the Lite)
1 cup of sour cream
1 1/2 Tbsp sugar
1/4 tsp Dill weed
1/4 tsp Onion powder
/8 tsp garlic powder
1/2 tsp salt
7 Tbsp white vinegar (1/4 cup +3 Tbsp)

Mix all ingredients except cucumbers and onions slowly in a large bowl until smooth. Take the thin sliced onions and cut "rings" into quarters. Slowly fold 'cukes and onions into sauce. Refrigerate at least 6-8 hours, preferably overnight. Enjoy!

Serve the above with tall glasses of iced tea or your favorite ice cold beer. Lean back and belch.

I'll be on Okemo in VT this weekend doing some pre-season work on a friend's ski house. Very close to Tom's Loft Tavern. We'll be there every night.
Praying to JuJu that Tommy has the smoker fired up. The man serves up some great pub grub regardless, and I only get up there a couple times a year.

And yer Hoppin" Jalapenos are also known as Buffalo Turds.  ;D

Reb- I made your cukes and onions! I haven't busted them out yet though. I smoked a brisket on my big green egg and it is resting finally only took 14 hours. The point is sliced up and being turned into burnt ends as I type. Company is starting to arrive!

I didn't get any pictures of the finished product. Everyone said it was awesome, I thought it could of been better. I am my worst critic though.

Next time you do the hoppin' jalapenos try using pieces of uncooked spaghetti noodles in place of the toothpicks to hold your bacon in place. The noodles cook while the rest of the food does and no toothpicks to remove afterward.
