Why not salt and then freeze? I have read that some people salt them and freeze them. Just google salting minnows for instructions.

pickle them in windshield washer anti-freeze for 10 minutes, then freeze them.  They absorb the alcohol and won't crystallize when frozen.  They are a little stiff and rubbery when thawed but the fish don't mind. They stay on the hook quite well.

I vacuum pack and freeze. I will salt them when I thaw them out.

Windshield fluid winter mix not summer mix. Winter mix has alcohol which is an anti-freeze
