A Favorite with family and friends

What you will need:

About 4.5 pounds of chuck steak
6 to 12oz Jim Beam Bourbon
(6) 15oz cans of Bush’s chili beans (mild or medium)
(1) 28oz can diced tomatoes
(1) 6oz can tomato paste
(2) TBS better than bullion (beef)
(4) 4 oz. cans diced “Hatch” chilies (I use 2 hot and 2 mild)
(1) stick butter
(1) pound of shredded mushrooms, yes, they must be shredded. (I use a cheese grater)
(1) cup diced celery
(4) cups diced onion
(4) sweet red peppers diced (no white membrane please)
½ cup chopped fresh Italian parsley
½ cup water
(3) TBS minced garlic
(4) TBS cornmeal
(3) TBS sweet Hungarian paprika
(2) TBS dried oregano
(2) TBS Worcestershire sauce
(2) TBS Sweet Baby Ray’s Hot Sauce
(1) TBS chili powder
(1) TBS of garlic salt
(1) TSP allspice
(2) tsp ground cumin
(1) tsp chipotle chili powder
(1) tsp black pepper
(1) tsp red pepper flake

Preparation:
1- Heat large skillet on med-high
2- Sear chuck steaks well on both sides and set them aside to cool. Deglaze pan with water.
3- Add butter and deglazing water to a large stockpot over medium heat (I use a 14 qt. stockpot)

Add onion, celery, red peppers, shredded mushrooms, and garlic.

Cover and cook vegetables for about 5 minutes or until tender.

Add seasonings, parsley, tomato paste, diced tomatoes, hatch chilies, and beef bouillon. bring to a simmer.

Cut steak into bite-sized cubes, add to chili, and simmer covered until steak is tender.

Add cornmeal, stir well and bring back to a simmer.

Add beans and return to a simmer.

Stir in Jim Beam, bring to a simmer then remove from heat.

Serve and enjoy!

I took first place with this one.

I haven't made mine this year 'cuz of the price of beef and other items....figgered it would cost me about $25-30 for a pot.   ::)

My mom's "chili' was 1/2 an onion chopped, a lb of hamburger, a quart of v-8 and a can of kidney beans.  Dump it all in a pot, boil for 20 minutes.  Serve with crackers.
