Will the transducer only work when submerged in water?

it will only work correctly when submerged in water, but should still work when it's not. if you just hold it a couple feet off the floor it should return a depth that will be much greater than the actual distance. the signal travels faster in water than in air. hope that helps

No, it will shoot through the ice as well. As long as there aren't to many air pockets and you can prvide some water for it to sit in/on. It will also shoot through the hull of a sigle hulled aluminum or fiberglass  boat/canoe. I use petroleum jelly to help it transmit through but water will work again.
