One of my favorites, heart, liver  and pancakes was one of my grandma's specialties, miss having her food.Lol, that was for retrofitting a filter on my cheap shop vac, can't find a new filter for it, so I made one work, the other one got burnt up cause someone didn't check to see if the ashes in the pellet stove were hot.

Easy Chicken & Cheese Enchiladas

1 can Campbell's Condensed Cream of Chicken soup
1 cup sour cream
1 cup good  Picante Sauce - Medium or chunky
2 teaspoons chili powder/plus light shake of  smoked chipotle powder
2 cups coarse chopped cooked chicken
˝ cup shredded Monterey Jack cheese
˝ cup sharp cheddar cheese
6 (6-inch) flour tortilla, warmed
1 small tomato, chopped (about 1/2 cup)
1 green onion, diced (about 2 tablespoons)

Step 1
Heat the oven to 350°F. Stir the soup, sour cream, picante sauce and chili powder in a medium bowl.

Step 2
Stir 1 cup soup mixture, chicken and jack cheese in a large bowl.

Step 3
Divide the chicken mixture among the tortillas. Roll up the tortillas and place seam-side down in an 11 x 8 x 2-inch baking dish. Pour the remaining soup mixture over the filled tortillas. Cover the baking dish.

Step 4
Bake for about 40 minutes or until the enchiladas are hot and bubbling. Top with the tomato and onion and the sharp cheddar.               :P

With food being so expensive in your state im surprised you are not making teas out of tree bark,eating fried squirrel thighs and making pigeon pot pies.

Well, there goes the price of chicken now. I'm ready to say f*** it, pack it all in, and head to Michigan, where I hear there's cheap steaks, free fish, and lots to eat. I can grab a load of pigeons and crows and I'll dine on bird  drummies in BBQ sauce on the way.

Pretty close to the same for me...! Had one of those little bacon wrapped filets from ALDI I found hiding in the freezer....and a pile of Zesty fries. Said to heck with the chicky enchiladas, just didn't feel like cooking again.

34* with sleet and rain. Took the easy route and popped a pizza in the oven. I added some ham, green peppers, sliced black olives, onions and cheese to a stuffed pizza. Can never have enough stuff on a pizza.  :P

I had a reuben pizza at work loaded with sauerkraut; it was pretty good. I have no self-control when it comes to pizza, I scarfed a lot down. Well, every one of us that ate it got food poisoning the next day. Later found out it was from someone that prepared it with Norovirus. Warning: You never want that to happen after a reuben pizza. It's the same coming back up and out.  :sick: Still can't eat one.
