I'm doing a little research about Ice ants.
What would most people use :size 10's or 8's and gold or bronze hook?.

I am guessing you are targeting panfish. I would use a #12 gold. Smaller and something shiny for an attention getter.

I have 8, 10 , 12, 14, ... and even a couple of 16 ice ants....But I would say 12 is the one that gets tied on the most....

I bought some ice antz by fiskas. I cant wait to try them. They are the 4mm and appear to look the part. They come in gold, silver and copper and all have that shine to draw in fish. I cant see why they wouldn't work.
