Great that you caught a nice mess of crappies. I use a mix of 1/2 mix of flour and 1/2 mix of
Italian bread crumbs. Get them wet with milk or water and dip in mix and pan fry at a medium
heat. Do not over cook, I'm sure you will enjoy. Let me know how you like them.

they are good eaters for sure....u can also make a beer batter...take a 12 oz bottle and pour it into a bowl...stir in flour until its thick enough to stick to the fillets....season the flour as you like....fry em in oil  :)

Beer batter is a great one. I also like to take nacho chips and grind them into dust than use like flour. ;D

I had some pan fired walleye tonight, and it was recomended that I trie using pancake batter, so I did and it was great. you just use the dry batter instead of flour, good stuff.

If you like the crunch go with turning your fav crouton into crumbs, they have more flavour then store bought crumbs...buttermilk dip, then crumb..then heat..enjoy

I like to eat them in fish tacos.  Put the fillets in tin foil w/ some butter, lemon pepper, salt and cayenne pepper and grill until done.  Shred the cooked fish and put it on some warmed up corn tortillas w/ shredded lettuce, shredded cheese, chopped onion, salsa, sour cream, and sliced avacado.  yummy.
