Cast Iron Ribeye

Heat cast iron pan in 500* oven

Coat room temp ribeye lightly with oil, kosher salt/fresh ground pepper to taste

Pull hot pan out of oven and place on a hot stove top burner

Sear ribeye on one side for 30 secs and don't move it, flip and sear other side 30 secs

Place pan with ribeye back into 500* oven for 2 minutes, flip ribeye over and cook another 2 minutes

Remove steak, cover loosely with foil and allow to rest for 5 minutes

Side of garlic mashed please! Enjoy!

I have done this before myself but it has been a while,thanks for the reminder.The only thing about this is it does get a little smokey  ;)

Does anyone age their beef before cooking?

I do, on occaision, but sometimes you just can't wait to dig into a delicious tender side of a cow!

Try this same recipe on the Weber.

Get a good bed of coals prepped.
Heat the cast Iron pan as above.
Move the pan to the Weber and sear as above
Cover, flip and rest as above.

Neither snow nor rain nor heat nor gloom of night stays these grillers from their appointed BBQ ;D

I do this a rule with a great steak. This is making me hungry :P
