how do you cook venison/elk/etc. heart???

i just got a pretty nice cow elk, and we are gonna cook the heart tonight, and if all you guys out there can post a few of your methods, asap, i would appreciate it.  we're hungry.   ;D

I'm not a big fan of heart but have had it fried in butter with a generous amount of garlic salt on it don't overcook it. Slice it thin and clean all the junk off of it before cooking.

what we ended up doing was mixing about half-and-half butter with extra virgin olive oil, then adding oregano, lemon pepper, and garlic powder, and frying it along with diced onions.  it was good thanks to it being a young cow, and the preparation turned out to be somewhat appropriate enough.

I like to cook them up in a pan with water and seasonings then grind them up for sandwich meat. ;D

Baked, Stuffed Heart;
1 or 2 whole hearts, cleaned;
remove the interior chambers leaving the outer muscle in tact

Stuffing;
1/2 loaf Sour Dough or Deli style seeded rye bread, cubed
3-4 stalks celery, chopped fine
1 medium sweet onion, chopped fine
1 1/2 c. beef stock Store bought is OK
2 large eggs

Mix dry ingredients, celery, onion and season with poultry seasoning, salt and pepper to taste
Add eggs and stock to moisten thoroughly
Spray a deep baking dish with Pam
Fill bottom of the dish with stuffing..about 1 1/2 inch deep

Coat the hearts with olive oil, season with salt and pepper
Stuff the hearts and place on top of the layer in the dish

Loosely fill the rest of the dish with the remaining stuffing
Dot the top of the stuffing with butter (not a lot)

Bake covered at 350 deg for about 45 min.
Remove cover and continue baking till the stuffing is slightly crispy on top.

The amount of beef stock you use will create the moisture needed to keep the hearts from drying out.

I GAURONTEE  this is delicious.

My favorite way to cook moose heart is to rub it w/ olive oil and season w/ Montreal Steak Seasoning then throw it on the Weber and grill it medium rare, Excellent!!

There is avery interesting canadian cooking show, called "Wild Chef" last week he did his show on moose, and cooked the heart in a very similar fashion as rgfixit stated above...crazy show, he goes hunting, gets his kill them shows gormet or off the wall ways to present the meal. he also cooked moose testies, panfired with mushrooms as well as giant moose ribs over the bbq and a crazy shank, that he left the fur and hove on the bottom as part of the presentation...looked tasty

We pickle it.  It's an old family practice.  Slice it, boil it, cut it into bite sized chunks, put it in a jar, and pour a pickling solution over it.  Let it sit in the fridge for a week and you've got some great appetizers.

Boil the heart in lightly salted water till tender,trim fat and and veins out,cube heart into cubes 3/4 inch.In a frying pan add some olive oil, a couple of clove of garlic and a big onion,cook till tender, add cube heart,brown it and deglaze with a little red table wine,add red pepper flakes,course black pepper and a little garlic salt.
