Fish Sticks?

Anyone have a good fish stick recipe? Family isn't the biggest seafood fan..They chow down on packaged fish sticks but that's the only fish I can get into them...Anyone made a good batch? Thinking I'd just cut walleye into thin strips and make fish sticks just need a good breading?

I have a really good fish ball recipe that non seafood lovers devour.  I made 200 for company picnic and all were the first thing gone.

cut fillets to whatever size you want.

Dredge with flour, then buttermilk and then panko bread crumbs and into hot oil (375+)
You can cook a few pieces at a time, but you need to allow the oil to get back to 375 or the fish will absorb oil.
You can add herbs and spices to the flour and panko to suit your taste.

I cooked up some white perch fish fillets that would give ANY restaurant a run for their money!

Then there's the choice of sauce...ie tartar, ketchup or (my favorite) shiracha sauce.....

the panko crumbs on the fish give it a good crust.  close to fish sticks.  my family loves it cook this way.

yep panko.  I only cook at 325 to 350 though as panko will burn easy.  Mix whatever spices you want in flour and set in a shaker or dish. I Like chili powder johnny's season salt, garlic powder, old bay, or just salt and pepper.

Dust finger sized pieces in flour, dip in egg wash, shake in panko and fry up at 350 for 2 min or less.

This is how I fry fish for fish tacos. Super crunchy.   a good sauce is...

1/2 cup sour cream
1/2 cup real mayo
1/2 lemon squeezed
3 to 4 canned chipotles and a spoonful or two of abodo sauce.
pinch of good salt.

Throw in a blender and you have made pink chile mayo/ tar tar sauce.
