beer batter

hey just wondering what some of your favorite beer batter recipes are?  I lost my favorite one and need to find a new one to replace it, if it is even possible.

For me its McCormick's Golden Dipt mixed with beer. Seems to seal well and not soak up much grease, also keeps the fish moist.  Turns a nice golden brown with a slight crispiness on the outside.

I make my own beer sometimes and keep a few bottles of darker beer in reserve for cooking.
For batter I take no-name pancake mix and add a whole bunch of lemon pepper and then add the dark beer until it is good and fluid without being too runny. If you dip your fillets in flour before adding the wet batter they get a bit more lighter and crispier coating.

I always used Shorelunch's until I tried this. Crisps really nicely and isn't as greasey. I do still use the original shorelunch for panfrying.

I like a little crispy batter.  Here's what I did on our family vac to Minn this summer & everyone loved it.

I like a little ground up crackers or corn flakes. 

Grind up a sleeve or two of crackers very very fine.  Mix 1/2 of Shore Lunch or Louisiana Seasoned & the ground crackers. Equal parts depending on how much fish you have. Add more seasoning if you would like. Mix in enough beer that leaves the batter a little lighter consistency than a pancake batter.  Usually will take at least 2 beers (or more) since the cracker crumbs seem to soak up a lot. But, you want the batter to run off a spoon.

I like a lighter batter that sticks. Soak the fillets in the batter than drop in the deep fryer or pan with at least 1" or so oil.
