Cooking Perch

I have been ice fishing for a couple of years now (mostly perch) and usually just fry them in a pan.  Im looking for a new way of cooking them.. any suggestions?

deep fry them in peanut oil with alittle lard in the oil.....We use itanlian bread crums or saltine crackers for breading.....I think deep fried is the only way to cook perch. :)
Northern pike are for guys that cant catch walleye :v)

definitely deep fried with saltines or rice krispies...butter, garlic and herbs are not a bad alternative either...

I dont like to do alot of different things with perch because they taste so darn good...I tend to flavor other fish like bass or trout in different and unusual recipe concoctions

You must try using Panko flakes for your breading.  Best method
I've found yet.

Dredge in egg/milk

Roll in Panko flakes pepper and a little garlic salt

Fry 'em up

Try melting some butter over low heat in a sauce pan.  add about 4 cloves of minced garlic,  let this go for a couple of minutes on low heat, add some green onions, mushrooms and diced tomatoes to the mix, let these soften a bit.  now add a little bit of white wine to the pan, turn the heat up to about medium, when its hot, add the fish and poach them in the liquid until they start to flake (couple of minutes on each side), remove fish and continue cooking the poaching liquid until it thickens up.  place fish on top of whatever type of cooked pasta you like and pour the sauce from the pan over the top.  salt and pepper to taste. it's wonderful.

10-4 on the Italian bread crumbs and fried fish is the only way to go!!! :thumbsup:

Try marinating your perch/fish in buttermilk for 30-60 mins. before before cooking too!!! *insert slobber and drool emoticon here*

bread and deepfry or sometimes just pour some beer into a little flower to make a thik batter then dunk them in that and throw them in the fryer. the beer makes the batter very fluffy and goooooood

The way to go ! Sometimes we do as for smelt....Zip lock/vac. seal with italian dressing (or your favorite1) in the bag 4- 5 hrs. or overnite in frig. Then fry or batter then fry !!!!!!! :flex:

Dip in egg and milk mixture

Shake in bag with Italian bread crumbs (add garlic powder only)

Drop in deep fryer filled with canola oil (healthier)

Remove once they start to float

Be sure to not overload the deep fryer and cool the oil too much or the fish won't cook evenly.

Heard a guy talking about cubing the fillets and boiling, then dip in butter I have'nt caught any to try out though

Melt butter over low heat, when melted add 4 cloves minced garlic,tea spoon chives,2 green onions chopped,salt and pepper to taste. Place a pot of water on to boil and add salt. Once the water is at a rolling boil add fish once piece at a time.Once all the fish is in the pot cook for 3min or just until they flake. be careful when removing and plate fish. Salt pepper. Poor butter mix into dipping cup. Serve with green salad and hot bread sticks. In joy.
Take a kid fishing,they make great pack mules.
Put the big ones back for another day eat the small ones.

In a skillet add 4 tlbs olive oil ,med heat
- add 1 clove chopped garlic
- pinch of red pepper flakes
-saute lightly do not brown
-add perch fillets
-cook 2 minutes
-add 1/2 cup white wine
-salt & pepper
-cook 3 minutes
-add 3 pats butter and fresh parsley
- 1 min                         serve over rice or pasta!    ;D

 I prefer pan frying ,but there is a recipe in the [ joy of cooking ] called fish spencer if you like baked fish it is quite tastey

If you like to fry them, try using bisquick instead of bread crumbs... it is a nice change...

I either deep fry em or pan fry em, just depends on how many I have and how indepth I want to get with cooking em. I bread em in a mixture of club crackers, alittle flour, paprika and some garlic powder.

Another way that is good too and works great if you have some smaller fish is to bring a pot of water up to a boil and drop the filets in for about 2-3 minutes, take em out (carfully) and put em in some ice water to stop the cooking and then out of the ice water and in the fridge for about 1 hour. Eat em like shrimp with cocktail sauce.
