Fish Tacos

    My Sister-in-law found this recipie and we had some the other night.I got to tell you it's not bad.You could deep fry your own fish,which I think would" kick it up a notch",and some homemade coleslaw would also.I'm gonna made all the stuff in advace and cook, "warm "the fish fillets on the grill out on the ice.It's pretty simple and it would be something easy to eat out there and different!

    1 package (10 to 12 oz) breaded or battered fish fillets (6 fillets)
    1 box (4.6 oz) Old El PasoŽ taco shells (12 shells)
    1/2 cup mayo or salad dressing
    1 package (1 oz) Old El PasoŽ taco seasoning mix (any variety)
    6 cups coleslaw mix (from 16-oz bag)
    Old El PasoŽ taco sauce, if desired

    1. Bake fish fillets as directed on package. Cut each fillet into bite-size pieces.
    2. Heat taco shells in oven as directed on box.
    3. In medium bowl, mix mayonnaise and seasoning mix; stir in coleslaw mix. Let stand 5 minutes. Fill shells with fish pieces and coleslaw mixture; top with taco sauce.
If it was that easy,everyone would do it!

I make fish tacos a few times a year.. here is a few variations you can try..

Instead of hard shells, I buy soft shell fold them in half and deep fry them for a few seconds, it puffs them up, holds the shape, but they are still soft in the middle.

Try adding lime juice and cilantro to the fresh just befor serving, nice fresh taste.

Instead of mayo I like to use a salsa.

I know this is the shanty and we are more concerned about walking on the ice rather than worring about the ocean but I like to make fish tacos out of what I catch deep sea fishing. I find that white fish work best so Cod, Haddock and Polluck are all perfect for fish tacos.

4-6 fillets
Fresh salsa
lettuce (shredded)
Shredded cheese
package of frozen corn
green onion
lemmon
Salt
Pepper
Taco shells
Guacamole (optional)
Sour cream (optional)

Bake the fillets (lightly salted and peppered with a squeeze of lemmon). I like a grilled corn salsa on my fish tacos so while the fish are cooking, heat up a tsp of oil in a pan and add enough corn to cover the pan in one layer. Pan fry the corn untill slightly chared making it look like it was grilled (be carefull not to have the heat up to high and burn it) add some sliced green onion 1 - 2 minutes before you remove the corn from the pan. Salt and peper to taste and top with some more green onion.
Once the fish is done break it up with a fork and serve on heated taco shells.

I've made fish tacos with perch filets and it is out of bounds.

I love fish tacos, usually substitute a mango salsa for the tommato type though, adds a a touch of sweet that goes very well with the fish
