Best way to filet a perch

Can someone tell the best way to Filet a perch. I am ruining all the perch that Me and my dad caught. trying to Filet them

This is the best I can do in my current condition without many pics.
I filleted 30 of them last night...

-Cut through the top of the fish right behind the head.
-Use your sharp fillet knife to slice length-wise as close as possible to the dorsal fin and beyond on each side.
-When you come to the rib cage start working around it, preserving as much meat as possible.
-Avoid cutting into the viscera/egg/sperm sack. This will take some practice.
-When you get to the belly use scissors to cut off the fillet.
-Place that skin down on the cutting board (which you should have been using this whole time) and use that flexible blade to shave it off of the skin...
-The final product should look something like this:

One tip i found helpful when filleting Perch, or any fish for that matter is to keep them chilled so that the flesh firms up. it's much easier to cut. This is easy to do when on the Ice, but if you have a mess of fish on a warm day, put 'em in a plastic bag and then into the freezer for 30 minutes to firm them up.

Also, shaving the filet away from the skin can be made easier if the filet is left attatched at the tail. this is done when the filet is cut away from the body it can be flopped over, away from the fish onto the board. Leaving the filet attached to the body keeps the filet from sliding all over your cuttting board...

moose....funny to bring up the sox...I was drivin past yankee stadium last month and the big sign out front which is usually full of info and yankee stuff read only one thing..."Welcome, Johnny Damon"   :)

I found the best way to fillet fish is use a good electric fillet knife. I use a rapala one :thumbsup: and I love. Plus it speeds up the process.
