i would have to say on average to have a perfect fillet about 3 minutes a bass

I use an electric knife and its takes me less then a minute to flay a perch.  Size makes little difference.

With an electric knife, it takes me ~ 1 minute to filet the fish, take rib bones out and skin it.  Talking about gills or crappies.

i bring out the mister twister buzz through the fish in seconds! them it takes me forever i do the charter cut fillet out the rib cage the mud line then portion into fish fry size pieces   mo

I use a mister twister to remove the flet and then use an small flet knife to trim the rigs away.  Some times when Im lucky I can get my wife to do the rib cut.  With two of us on the job we can go through a lot of fish in a hurry.......

Last year I did 84 panfish in 37 minutes with my electric filet knife. Once you get a system going you can really fly through them. I do want to add that they were not all my fish, but my fishing buddy's fish as well.

In my youth, With 3 sharp knives, I used to do almost 1 gill every minute.  Alas, age has caught up with me and now it's more like 1 every 2 minutes.

I start off a little slow but get into a good rythem after the first 5 or so and blast thru the rest.

with two guys we did 100 perch in 40 minutes (electric knives).
