Seasoning
Combine all 4 over heat, eat.
Seriously I think that this is the BEST way to eat gills!

Ground up crackers w/ some season salt & lemon peper. Dip in egg wash then into cracker mix and fry in oil.

Ensure the fillets are dry, dredge through pancake flour then into an egg wash. Roll in breadcrumbs or seasoned breadcrumbs or pancake flour (with or without seasonings of your choice) drop in hot 375 degree oil. Fry until golden brown.
