I'm not a big fan of the crumbs or crunchy filets so here is what I like to make them puffy and airy light.Take some quality beer and pour it into pancake dry mix. Mix it to a semi thick batter and drop filets/ chunks in .It will stick well without using anything else.Drop them in hot oil until they float and turn golden brown.Take out and they will melt in your mouth
