THE WIFE LOVED IT

Cooked something up last night for my old lady and she loved it.  She had been complaining about too much fried fish.  It turned out a lot better that I had hoped, even good for lunch today. 

“Fish Chowder”
Bacon
Med. Onion small dice
Stalk celery small dice
Bell pepper small dice
One large carrot small dice
Can of diced tomatoes
Can of broth (chicken or fish)
4 med. Potatoes med dice
Garlic powder
Salt pepper
Old bay or equivalent (I used Penskeys "North Woods")
1 ˝ pounds fish cut into chunks

Brown a couple peaces of bacon in a Dutch oven.  Remove bacon and add all the onion, carrot, celery, bell pepper, salt and pepper.  Cook on med low heat until nice and soft. Add garlic powder, old bay, broth and tomatoes with juice. Bring to a boil, reduce and simmer for 10 mins.  Add potatoes and simmer covered for 15-20 mins or until almost done.  Add fish and cook until done (Another 10-15 mins.)  Makes four big bowls.
