 cheez-it crackers  smash the crackers up real good get the fillets dry on paper towl roll-em in the cheez-it crumbs fry real good

hey guys i tried the Panko and was not to impressed all the crumbs just fell off i used egg and milk also

i tried the rufffels chips/cornflake crumbs/louisiana seasoning...was absolutly blown away!!!!!!!! Best batter i've ever had. Thanks to whoever that was!

Golden Dip Beer Batter......Put the fish in a bowl,pour on white vinegar and stir for no more than 1 minute with your hands.take the fish out and put in a gallon size zip lock with a cup or so of regular flour and a tablespoon of creole seasoning..Shake the daylights out of it and let sit in the bag while mixing the batter . golden dip works better if you let it sit after mixing for a few minutes then ad more beer.Take the fish and run it through the batter and drop it in the hot oil....EASY... I run my fryer at 350...Watch the look on peoples faces when they eat this...    ;)2 :woot: :thumbsup: :bow:

Flour the dry filet, then egg wash then panko.

I like thin batter on my fried fish.

I don't like chewing through half a loaf of bread to get to the fish. (like at some of the restaurants around here)

Corn flour and deep fry.

Second choice is Shore lunch.

1 cup flour
1 tsp Baking Powder
1 tsp salt
1 tsp ground black pepper
1 cup Milk
1 egg
1 1/2 lbs Fish

Mix flour and other dry stuff together...stir in Milk and Egg until smooth. LET STAND 20 MINUTES. Coat and fry.  You can add whatever spices you like. I perfer it the way it is.
NEVER lied about the size of the fish I caught.....just remember them being BIGGER!!

      I am eating large mouth bass and walleye right now. All I did was dip it in cornmeal and black pepper. Eating it hot and cooling the tongue with some ice cold Coors Light. The wife doesn't like fish so more for me.

I tried Zatarains new orleans seasoned fish fry last year on perch.It was the best i had,and you can get it at walmarts for a few bucks.

I was wondering if anyone would mention this little know treasure. I got a couple of boxes on a clearance rack a couple years ago. Holy *bleep*! One of the best store bought batters I've tasted. Can't find it anywhere now. They sell everything but the fish batter. May have to resort to on-line.

Another unheard of and really good one, is Gary Roach's wild game and fish batter. Dad orders 25# directly because it's so unreliable as far as availability. We pitch in and split it amongst the family members. I'll see if I can find a link. A little on the salty side. If you're sensitive to salt like I am, just add some flour. It's super good on freshly diced venison tenderloin fried in butter. Those are eaten up while processing. The SIL just throws the bowl and forks on the table and runs. You just might get stabbed if you're not careful.

All of the ones mentioned are good, but mostly I make my own. I rarely get bored with it. Be creative. Just about any seasoning you use on other meats, is good in flour or crackers. Come up with something new.

Super simple - the no-name pancake mix that requires you to add milk and eggs. Mix it with a good heavy beer and a generous amount of lemon pepper. I've tried the "just add water" types but they seem too sweet for me.
Dredge the fish in flour then the wet batter for a crispy, more airy finished product.

Another vote for the Zatarains. My favorite. ;D

Golden dipt also has some good ones. The Beer Batter & the Fish Fry are good.

If you ever get hit with a bucket of fish, be sure to close your eyes. ;)

Just did up a big batch of walleye and perch fillets last night using Fish Crisp - Roasted Garlic flavour.
I used the same company's shaker container. It just doesn't get any easier.
I like the new resealable package too.

Frying Magic mixed about 50/50 with seasoned Italian bread crumbs. Egg wash, and pan fried with just a little butter. Sometime I add a little extra grated Parm. to the mix.

This is my favorite! A nice light batter that does not soak up the oil!



I am cooking up some walleye tonight, but im just going to fry'im in a pan with some lemon pepper. :P

2 cups Progresso Italian Bread Crumbs, 1/2 cup Parmesan or other sharp cheese.  Dip in either beer, milk or egg wash, coat and pan fry in 1/2 butter, 1/2 olive oil.  (or peanut oil, but I always add a little olive oil....hey I'm Italian!)

My grandfather used to take all our fillets and bake them in a combination of butter and cream, and a layer of bananas sliced on the long and some bread crumbs on top.  It was delicious!

Sometimes, just plain old egg and flour does the trick for us. That's how my Mom used to cook up the fish we would catch on vacation.

I like a lot of the batters I've seen here, but House Autry is at the top of my list right now.  Moist fillets lightly coated and thrown in the fryer...  Light, crispy, and full of flavor.
