i like to use flour, beer, salt and pepper, maybe some lemon juice. and whip an egg whit until it's pretty firm and gently fold that into the batter just before coating fish. If you like the coating to be puffy, this will work for ya.
If people concentrated on the really important things in life, there would be a shortage of fishing poles.

Zatarans new orleans fish fry, blue bag. dry the fish, dip in egg and cover in zatarans. deep fry and enjoy.  :thumbsup:
also works great for frog legs.

My Biggest worry is that when I'm dead and gone, my wife will sell my gear for what i said i paid for it.

I have been exploring low carb walleye recipies and I have found one that I really like.

Simply roll the fillets in a bowl of parmasan cheese with a bit of black or lemon pepper to taste
Then dip in a bowl of beaten egg and back in the bowl of parmasan mix.
Fry in a pan of butter until golden brown.

Its great and ultra low carb!
I thought the parm cheese would give it a wierd cheese taste but its actually more like a flour coating with a great flavor. Actually to tell you the truth, low carb or not, I prefer it to flour.

Try this one. Cut walleye fillets into @ 1" cubes. Dry them on paper towels. Put them in a bowl with a beaten egg, milk,(half and half is even better) and about a tablespoon of Old Bay Seasoning and let them soak for a bit. Take 1/2 box of corn meal recipe Shore Lunch and put it in a ziplock along with a little more Old Bay. Shake your cubed walleye of excess liquid and add it to the bag, then the rest of your package of Shore Lunch. Seal it up and shake to thoroughly distribute the breading. Deep fry IN SMALL BATCHES at 375F. remove from fryer, drain and place on a cookie sheet with a rack on it in a 250F oven while you continue to cook the rest of your fish. The trick is to only put a small amount of fish in the fryer at a time so your oil stays good and hot. When the last batch comes out of the fryer, everyone can enjoy nice hot fish at the same time instead of eating each batch as it is cooked.

The ol' stand by...beer batter...one part beer to one part flour with a couple of shakes of seasoned salt and black pepper.  ;D

All Time Greatest Breading
50/50 Panko and parmesan ramano cheese
Make sure filets are REALLY dry, use a few sheets of paper towel if need be belive me it really makes a diffrence on how good everything sticks
next, flour all filets in all purpose flour
then, dreage in an egg wash consiting of egg and a little milk or oj
after that, bread in panko/cheese mixture, I usually season mine with garlic powder, onion powder, paprika, salt and pepper
Honestly, this took a while to perfect but I've never had anyone say it wasn't the best fish they ever had!!!! 8)
O, I almost forgot the most IMPORTANT part Peanut oil heated to EXACTLY 375*

I just made this last night and it was truly amazing!!! I don't think I will ever use shore lunch again.

The other night I used beer batter but instead of beer I used hard cider [woodchuck amber]. Excellent background   flavor, couldn't eat enough. It now is my favorite recipe.

Pancake batter with beer is hard to beat in a pinch.........any kind of beer batter for Walleye
