ever eat perch eggs?
« on: Mar 16, 2007, 10:28 AM »
i've fried up whole perch egg skeins to eat befor, and they don't taste too bad, but, they don't have a lot of flavor, either.
they are slightly salty with a hint of fishy taste, with a firm texture, like a stiff pudding.
does anyone have any recipes?
when you clean a mess of perch there is a lot of eggs, and with a little care you can remove the skeins whole.
when i throw them away i always feel like i'm wasting something good.

( i'm serious, but boy, i can hear the jokes already!)

grandpa told me-"never wrestle with a pig. you both get muddy and the pig likes it".

I boil them and put them in a small piece of old nylon stocking tie off the end and use as trout bait. Works great as spawn sacks some times i add some red or yellow food coloring for extra attraction. But I have never eaten them. ;D

Dad and Grandma would soak them in milk, then roll in flour and panfry. They could not get enough of them.
Grandma also took the Perch bodies, and used them in soup. That was delicious.

Believe it or not, I ate a skein of perch eggs yesterday at our local watering hole. I filleted them out, dried them offf, split the skein in half, and applies 5 drops of Frank's Lime/Chili flavored hot sauce.
It's an acquired taste, not for the faint of heart!

Now I have cut open fresh sea smelts and eaten the eggs (to spook a newbie and for some reason taste like watermelon candy) but the way you describe, I would be afraid to get a little number two right in their with those eggs

Sunfish eggs are actually good. I have had perch eggs, rock bass eggs, and crappie eggs too. Sunfish eggs are by far the best. My dad and grandpa turned me on to them. You fry them gently in butter and eat them straight out of the pan.

Do NOT try rock bass eggs. Holy ish!

I often wondered about eating them , but I always noticed that when discarding the leftovers after filleting nothing would ever eat the eggs.  The critters would gobble up everthing else usually within the night , but would see the eggs for weeks. Red fox ,crows, etc we would see in the pile . Might have to try some this season.

My other half would rather eat the eggs over the filets any day. When I get perch in the spring is the best time she says. Just bread with breadcrumbs and eggs wash, + fry like a filet. The jumbo eggs that we get in the spring have to be split open, but the smaller ones can be fried whole. I brought some to my neighbors, and they acted like I brought them a prime rib or something, But then again they eat tripe too. :)

I've ate a ton of things that maybe I shouldn't have, but for some reason, I think I just threw up in my mouth a little bit!   I'll try something to eat once.  I've had different types of brain, head cheese, internal organs, blood sauces & sausages, but for some reason, I don't want to try it!

Yes, I did just that this weekend.  When I filleted a half dozen yellow perch, I saved the egg sacks, split them in half so they were about 1/4 inch thick and pan fried them in a bit of oil.  Tasted great, just as good as the fillets.

BTW, I made fish cakes from the fillets.  I mixed broken up pan fried fillets with chopped onions, Italian seasoning, garlic, and mashed potatoes.  I pan-fried them and the wife actually asked for seconds - that's a big endorsement from her.  Looks like I'll be keeping perch from now on.  ;D

Everyone has to believe in something.  I believe I'll go fishing.

Here is some perch eggs and filets I did yesterday. Use eggs/milk then coat with seasoned bread crumbs. I cook the eggs in oil that is not super hot so they get cooked all the way through. Then use hotter oil to do the filets. Deb said the eggs were gadam great, and she did not eat 1 filet, but she ate all but 1 of the eggs with tartar sauce. YUMMY!!
