What is Your favorite fish to Devour?

I cook salmon on the grill  with brown sugar, soy sauce, butter and garlic salt. Mouth watering!  Thought walleye real tasty too when I fished for them in Canada on vacation.
What's your favorite fish to devour!

My favorites are Walleye, perch, and ling. In my opinion these are the three best eating fish that are widely available in Montana.

Definitely some boiled ling dipped in garlic butter. Or deep fat fried

Call me weird but I also LOVE grilling rainbow trout with butter, garlic, lemon zest, and Johnny's seasoning salt inside them. Clean them then cut the head and tail off and wrap in aluminum foil and wait for the butter to steam through the fish. You can pick the bones out in one piece and the meat tastes amazing. It loses most of it's overpowering trout flavor and absorbs the spices. Another good seasoning salt is Montreal. Can't go wrong

Perch, breaded in any cajun breading, with a little extra corn meal thrown in. Then a box of Zatarains New Orleans Style Red Beans and Rice.  Makes me eat till it hurts...

I think this is the recipe I followed last time.  then I just added a bit of flour and the sourdough until I got the consistency I wanted.  As far as the sourdough goes, its starter i've been using/growing for years.

Thanks Trykon - that's pretty similar to the beer-batter I do - I was more interested in the sour dough aspect of it.  I got the basics of a sponge starter, but how much of the sponge starter do you add to the beer batter?

Tina, are your salmon wrapped in foil on the grill or just open on a sheet of foil? I'm assuming kokes. I'm for perch, walleye, crappie or trout. Smoked or grilled salmon too.

They were the salmon we caught in Puget Sound, so just slab of coho or King in foil open, skin side down!  Dee-Lish! how do the kokes here compare in taste, haven't caught any of those yet.

I agree with the HYALITE cuts and Brookies.  Fillet them out roll em in flour with salt and pepper fry em till crispy in butter.  There like candy.

Fresh smoked kokanee salmon...mm mm good.  I also love me some perch/walleye/pike rolled in cajun seasoned cornmeal....preferably as a shore lunch.

 Tina, kokes are milder but still salmon, just takes more of them . Y our recipe sounds good, will try it.
