How To Cook Perch?

I've been having a pretty good year on the perch so far.  I love filleting them and having a fish fry but I'm looking for other ways to cook them.  Do you guys have any good recipes?

I like to use'' Louisiana Shrimp Fry'' seasoning. To this I add some cajun seasoning ,salt and peper. Deepfry 3-4 minutes and enjoy.

Dampen the filet in water, coat it with flour, then dip it in eggs mixed up, dip them in Panko bread crumbs fromthe oriental sections at your T^^^s or We^^^^^s, fry them in 350 degree Canola oil in a deep frying pan. Turn them over when the brown.

These are the finest fish dinner you will ever have in the world. Walleyes can not compare to perch. The smaller the perch, the better tasting it is.
You can not take too many perch, unless you can not clean them, give them to your friends and neighbors to clean and cook. The more perch you take, the faster and bigger the rest  will grow. The walleyes and bass will survive from fry to fingerlings.

 pan fry mine lots of butter nature seasoning , fish Spencer for baked in[ the joy of cooking ], deep pan fry Mrs. filet uses canola oil, flour, egg and Italian bread crumbs

I LIKE TO DEEP FRY 'EM AFTER BEING DREDGED IN THE FOLLOWING:
1 CUP FLOUR
1/2 CUP GROUND PEANUTS - USE A MAGIC BULLET, BUT STOP GRINDING JUST SHORT OF MAKING PEANUT BUTTER!
1/4 CUP GRATED PARMESAN CHEESE
1/4 CUP CORN MEAL
1 TABLESPOON LAWRY'S SEASONING OR YOUR FAVORITE

MIX INGREDIENTS TOGETHER AND PUT IN LARGE ZIPLOK BAG.  PUT IN SLIGHTLY DAMP FILLETS AND SHAKE. DROP IN HOT OIL, FRY FOR 30-60 SECONDS AND YOU'VE GOT PERCH FRIES!  PEOPLE GO CRAZY FOR THIS STUFF!

We call it "poor man's shrimp."

Boil some water with salt. Add fillets. Remove fillets. Take cocktail sauce out of the fridge. Enjoy.

I love deep fried fish but it is definitely not a healthy habit for as much perch as i seem to go through in a winter. A buddy got me hooked on a healthy, easy, and delicious way to cook perch.

Boil some water and add some chicken bouillon cubes. Season your fillets with about anything, I use a little garlic, lemon pepper, and black pepper. Add the fish to the boiling chicken broth and boil until they begin to flake apart.

I then add a bit of lemon juice and melted butter is optional. I also cook some 10 minute chicken flavored rice to eat along with the fish.

Give it a try, its at least another alternative to deep frying.

I don't fillet my perch, I clean them, like this

Then, i usually bake them.  For 3-4 perch I mix up the following and drizzle it on:
Couple tablespoons melted butter
1 tb lemon juice
2 cloves pressed (or finely minced) garlic
1 tsp thyme
1 tb parsely
1/2 tsp sugar, pepper, salt

Top w/ some breadcrumbs (panko breadcrumbs are good too) and bake at 425 until the fish is done (depends on the size of your fish, somewhere between 10 and 20 minutes)

When I don't want to deep fry them I cover the bottom of a fry pan with Olive oil (any high temp oil will do). Slice cloves of garlic in to the hot oil covering the bottom of the pan. Drop the floured fillets on to the garlic cook and flip on to more garlic. When done right you end up with fillet covered with a lightly brown, crispy toasted garlic coating that is mild (the garlic is cooked) and very healthy.

marinate the fillets in italian dressing overnight then heat olive oil in a pan and add minced garli when hot add fillets and cook until fillets are white about 3min on each side . Take out and serve with your favorite sides. Havent fried fish for 3 yrs taste great

if you get some jumbos take to filets put a stuffing mix shrimp or crab in the middle then bread the hole thing pan fry or bake very tasty

Take them out of water and chill in fridge poor man's shrimp.

i don't know about near you, but there are some nasty parasites you can get that way in the perch near here.  here is a link that the state fisheries biologist sent me when i emailed to ask what the big red worm i found in one of my perch was.
