Dinner for 2 tomorrow night!

Nice mess of perch!

Made my small haul from Friday into perch cakes!  Pan sear, oven finish @420 degrees.  With spicy lemon aioli

Looks excellent, Tim!  Fish cakes are a great idea.  I think I'm going to try a new chowder recipe for some of the perch.

Nice work. You should get a replica of that football, Nate. I would.

I went Sunday and caught 10 keepers, biggest was 13.5". Jumped over to the other lake looking for water wolfs for an hour. No luck, but the mountains were blue.

Went home for the donkeys game and some fish tacos!

Nice looking perch, guys!  Yeah, Vex I’m definitely looking into a mount.  Ain’t bad for a Colorado perch!

Those taco perch look awesome!  How did you prepare them?  Baked?

Deep-fried in a bass pro fish fryer. It's the best way to go. Consistent and not much of a mess.  My wife has a recipe that is killer, so we invite friends and family over and have a big fish fry a couple of times a year. It's great.

I don't know if he will ship, but check out Topnotch Taxidermy in SD. His replicas are incredible.

Thanks for the suggestion!  Dang looks like quality work...but kinda pricey.  $350 for one-sided.

A little pricey, but my experience with replicas is you don't want to go cheap. If you do, they just look fake and cartoonish. His perch replicas are the most real looking I've seen.

Maybe a certain location on the front range will have good ice to reach out to the flats this year...a 15” or 16” would be nice!   ;D

New Jersey???

The world record yellow perch (18 in (46 cm); 4 lb 3 oz (1.9 kg)) was caught in 1865 in New Jersey, and is the longest-standing record for freshwater fish in North America.

Very nice.  Hook us up with that recipe.  I plan to keep a limit of largemouth tomorrow and would like to give it a try.

Fish Cakes Recipe

1lb white fish filets (perch in my case)

2 clove garlic (minced)
1/4 cup red pepper or jalapeno, red pep is traditional jalapeno is my spin (small dice)
2tbsp butter

1/4c mayo
2tbsp mustard
1 egg
1/2c bread crumbs
2tsp old bay season

1)  boil perch filets for 30-60 seconds until they are just barely cooked (do not overcook, youll have f'ed it up badly on the first step), remove from water and cool in fridge

2)lightly sautee garlic and diced red pep in the 2tbsp butter

3) combine the sauteed veg, boiled perch filets and all other ingredients in a bowl and mix, if mix is too loose add breadcrumbs until you like the consistency, put mix in the fridge to setup (with this in mind, the mix can be a little loose as it will solidify in the fridge)

4) Form mix into cakes (dont go too thick or youll have to overcook them trying to get them heated thru all the way, 1/2" thickness works well, remember the fish is already cooked) and coat cakes in bread crumbs (I like panko)

5) pan sear oven finish.  Hit them quick on either side in a hot pan with oil and finish in a 450 oven for 3-6min (if you see the cakes "leeching oil" once theyre hot in the oven theyre done and about to be overdone, thats the fish overcooking)

Spicy Lemon Aioli

1/2c real mayo
2tsp sambal chili sauce
Juice from 1/4 lemon
Salt to taste
