Chicken with Lime Butter

An easy chicken recipe to make...

3 boneless chicken breasts; slighty pressed
1/2 tsp salt
/2 tsp fresh cracked black pepper
1/3 cup light vegetable oil
1 whole lime
1/2 cup butter (or good margarine)
1 tsp chopped chives
1/2 tsp chopped dill weed

Rub chicken with oil, sprinkle with salt and pepper, heat remaining oil in large skillet on medium heat. Add chicken; cook until just starting to turn light brown, turning frequently, about 3-4 minutes per side. Cover; reduce heat to low. Cook 10 minutes or until tender. Remove chicken to serving platter; keep warm. Empty oil from pan; squeeze juice out of lime, saving lime, heat until starting to bubble. Add butter in small chunks until it becomes thickened; stir in chives and dill weed, remove from heat.
Let stand one minute. Spoon over chicken, garnish with lime wedges.  Enjoy!
