dipping sauce for meat
« on: Jan 15, 2012, 06:33 PM »
have been using this for years. not my invention but, modified and ''stolen''.
.
one pint of homemade plum jam if you have it. store bought works but, isn't the same. peach is a good option. jam not jelly. you want the chunks.  (at least i do). go with jelly iffn you can only get it.
.
1 1/2 ounces of horseradish - a 3 ounce jar won't kill you.
.
2 tablespoons of whorcestershire sauce.  1/4 cup is better.
.
hot sauce to taste. i like 1/4 cup of chipolate instead of a teaspoon of Franks.
.
mix all the above together and let set a minimum of overnight in the fridge.
.
.
we have used this on deep fried goose or duck breast strips. good eats.    venison cut into chicken finger sized chunks, rolled into shake-n-bake for pork and cooked in the oven is a pretty good bet too.    chicken wings, pork strips, etc all work equally as good.
.
keeps for up to 4 months in the fridge incase you forget about it (doubtful)
.
enjoy
