Pancake mix if I'm trying to use batter for the fish.  Typically I would say soak in Hot Sauce then coat in Andy's and fry them.  Occasionally batter is requested and I would use pancake batter with some added seasoning.

Don't sleep on breading your blue gills with smashed up sour cream and onion chips which was an idea given to me by someone on this site!

1 cup flour, 1 egg, 1 beer, mix til smooth. I rinse the fillets, then dredge in dry flour. Dunk the floured fillets in beer batter then into the grease.

1:1white flour rice flour any dry spices you prefer add ice cold beer to point of pancake batter consistency. Pat fillet dry roll in batter then sprinkle panko on battered fillet launch it 350 degree lard.  This will produce some extra crispy fish batter.

I've been using Andy's red fish breading for the past couple of years and I really like it. Breading sticks well to fish by just having the fish moistened with water. They also have regular and Cajun.

use to use Drakes batter deep fried for walleye and perch
wife has her own secret mix now witch is great

as for brook trout a little lemon and cook until the eyes turn white no more

Not sure if Drakes has been around for 50 years, but pretty sure I have been using it for what seems like 50 years.....drakes on gills - my favorite.

Depends on how the hunger mood strikes me. 

I'll use egg, flour and Progresso Italian bread crumb and fry in peanut oil.

Or I'll use Pankos.

Or just plain fillets and butter in the fry pan and fine black pepper.

When we had a restaurant, we used Golden Dipt. We would prebread 50 pounds of perch fillets, and freeze. Held up really well. I believe McCormick sells it in retail consumer size packages.

I soak them in buffalo sauce then use the spicy buffalo shorelunch. For a little extra spice I make a spicy tarter sauce. Same as making regular tartar sauce just add some sriracha until it’s where you want it. You don’t really taste the sriracha but you still get the heat from it.

I know some people have a love hate relationship with bass pro shops but man you can’t deny how good their hot and spicy uncle bucs batter is. I have introduced a lot of fishing friends to that batter and it’s now their go to as well.

I like this product. Sometimes mix the two together for a toned up or toned down taste. Ad just a little flour and more will stay on the fillet keeping the pan cleaner for easier cleanup.
