Makes me want to stop doing fish in deep fry! Almost!
If you like mixing it up...Alfredo's and scampi are both pretty awesome with perch meat. I was stunned how easy it is to make a scampi from scratch when I googled a recipe. It's one of my favorite ways to eat perch now.
you had me at fry some bacon......
Brown a few strips of bacon then throw in some diced onions and soften, add a couple tablespoons of flour to make a rue and cook for a couple minutes.The add a few cups of either seafood stock or clam juice and a few cups of chicken stock and some water. Throw in a couple sprigs of thyme some salt pepper paprika and a little bit of old bay bring to a boil and let it cook for 10-15 minutes. Add some diced potatoes and I throw in a little corn. When the potatoes are done throw in your fish cook a couple minutes then shut it off and finish with cream.
