Chowder Tonight

Brown a few strips of bacon then throw in some diced onions and soften, add a couple tablespoons of flour to make a rue and cook for a couple minutes.
The add a few cups of either seafood stock or clam juice and a few cups of chicken stock and some water. Throw in a couple sprigs of thyme some salt pepper paprika and a little bit of old bay bring to a boil and let it cook for 10-15 minutes. Add some diced potatoes and I throw in a little corn. When the potatoes are done throw in your fish cook a couple minutes then shut it off and finish with cream.

Well I have 800 perch put away need to change it up sometimes, plenty of it gets fried lol.

fish chowder is awesome. I made some for the first time this year and i was amazed at how god it was. The old bay seasoning gives it a nice taste. put the bacon on top and that will make it heavenly.

If you like mixing it up...
Alfredo's and scampi are both pretty awesome with perch meat.
I was stunned how easy it is to make a scampi from scratch when I googled a recipe. It's one of my favorite ways to eat perch now.
The angle of the dangle is directly proportionate to the heat of the beat.

I do something similar I make a garlic lemon butter and broil them in it.

Every spring the wife makes up a very similar kettle using Bullhead. I'll pass the recipe on to her, and I'll get out fishing pronto!

Never thought about making a chowder gonna have to try it with some Walleye, ain't no way I'm making it with perch!

Ive done a few chowders this year but never thought to add the flour or the corn.  Good suggestions!

I make my own stock with what is left after filleting the fish.  Throw the carcasses  in a large pot.  I add onions, celery, and bay leaf.  I then boil/simmer for several hours.  Then strain it and you are ready to make your chowder however you want.  I just finished up a batch using 40 gills.  We did chowder with fried fish. ;)

I've thought about making stock it's just too easy to go buy it lol.
