Cajun Broil

Wanted to try something a little diffrent other than standard fried or baked fish.

Took two Pike Fillets rinse and pat dry if they are thick thin them out to around 1/2" thickness
Sprinkle sides with a mix of I hate to say this but store bought McCormick's Bayou Cajun
Slice sweet onion and Red peppers and place on seasoned fillets
Place butter pads on top
Place on foiled cookie sheet and under broiler set on high
Cook according to size fillets mostly like around 10 min. Look for a nice browning of fish but be careful not to overcook just golden around edges works great.  DO NOT FLIP!
Take 1/4 stick butter and melt in microwave and mix with hot sauce of choice Mine happens to be Franks Red Hot.

When Fillets are done serve and dip in Butter hot Sauce mix. This reminds me a lot of lobster and any fish substitute will work. Add Slaw of your making and enjoy!
