perch hands down  although when I bake pickerel fillets and pick the bones out it beats any tuna fish when mixed with mayo and relish

I gave my reply earlier, on the 1st page . I really do enjoy a good salmon or steelhead steak on the grill in the summer time. Skin side down little dill, season salt, basted in butter. Not only good , but good for you.

I will say a bass from under the ice sure is tasty. never ate one till a guy kept hounding me for tossing tem back down the hole.

Couldn't tell the difference except for the bones.both were excellent

Always through my chains back till a friend asked why I don't keep them. Kept a few cooked them up with walleye fillets. To my surprise we could not tell the difference except for the Y bones in the chain fillets! Both great

By far the worst fish are crappie and trout.  Crappie are the worst textured fish I ever ate.  Mushy meat.  For any of you guys listing crappie in one of your favorites, cook some crappie filets next to some perch or bluegill.  You'll realize how bad crappie is comparatively.

I do agree that crappies are mooshy compared to other pan fish. However they are pretty tasty. I really hate cleaning them cause their so soft. I won't take home more than a half dozen any more. For that reason

How do you cook them? I do agree they are a bit mushier when cleaning, but if cooked properly they are just as firm and flaky as others. When they actually live in a lake that they can grow to 12 or 14in they are pretty top notch!

I have to say yellow perch are my favorite. Next would be bluegill and crappie. Walleye and pike are also on my table whenever I catch em. I have to say that the "mushy" crappie thing doesn't hold true for me. I usually quit keeping fish when the summer heats up, and when i do store fillets in the freezer I use the ice block method. One other thing. When I bread them for the deep fryer I let them sit breaded for 10 min or so before they go in the oil.

BROTHER I forgot about smelt,man your right they are great,rolled in flower and deepfried.I remember cooking them on the ice on harveys lake right over the lantern.They are a great tasting fis,im surprised no one else mentioned it.

Perch, walleye, gills, bass, bullheads. In that order. Pickerel are very good just don't like pickin bones. Personally I think crappies are bland and soft and mushy. I love catching em though! They'r usually my giveaways if someone asks me for fish. My opinion.
