Sushi??
« on: Dec 24, 2009, 06:37 AM »
My wife and I love eating sushi. This brought to mind a question: Has anyone here used fresh gills, or crappie for sushi? I haven't tried making sushi at home yet, but if I were to, I can't think of any fresher fish than the ones I catch! What say you?? ???

Not sure on that one.  I have used some of my tuna I get down in Mexico for sushi.

Also I use the Dorado (or Mahi Mahi) for Ceviche.  I cube it up about 1/4 inch and soak it in lime juice for an hour, then mix in with a fresh salsa made with tomato, jalapenos, onion, cilantro, and add cocktail sauce to bind it all together.  Makes a great dip for chips!

My grandfather cut the cheeks out of the walleyes when he was fishing on Oneida, he lived to be over 80 years old. I don't remember him ever getting a parasite, or bacterial infection from it. I love the sushi too, but other than grossing my son out eating a few cheeks, I like my fatty tuna any day.

Eating raw fish is called sashimi.  Sushi is a dish using vinegar rice rolled in seaweed.  Sushi can have raw fish added to it.  DO NOT USE freshwater fish in either sashimi or sushi.......  YOu will eventually get parasites, usually fish tape worms.  THe worst one is the longest tapeworm in the world Diphyllobothrum lata that grows to 27ft long in your gut.  Its not if but when if eating raw freshwater fish you will get some type of worm in you gut...  I do know of a guy that got worms from eating raw walleye! and several from Northern Pike.

agreed minnows are a fine cuisine, if you have not tried it yet, it is definitely recommended. probably a good idea to let them swim around in your beer first, then drink um.

The thought of raw fish is just repellant.
Every plastics manufacturer claims plastics outfish livebait. So now I use livebait just for the increased challenge.

Sure, give it a try.  Especially if you enjoy parasites like tapeworm, flukes, and bacteria that can kill you.  Enjoy!

I'm preparing some walleye and bass for pickling and bumped into this.

The Broad Fish Tapeworm

The broad fish tapeworm infection can be contracted by humans from eating raw or undercooked species of fish found in the Great Lakes area.

The larvae of the broad fish tapeworm pass through smaller fish until they lodge as hatched small worms in the flesh of large carnivorous species of fish, like northern pike, walleye pike, sand pike, burbot, and yellow perch. This worm, if eaten by humans in its infective stage, can attach to the small intestine and grow to lengths of 10 to 30 feet.

The infective worms are destroyed readily either by cooking or freezing. Two recent outbreaks of this tapeworm in Minnesota were related to eating uncooked pickled pike. Those who wish to prepare raw pickled fish should first freeze the fish at 0° F for 48 hours.

Yep, thats the same one I mentioned Dyphyllobotrum lata.  Thought to have been brought to the USA by Finlanders that like to eat pickled and smoked Pike and Perch caught icefishing! ;)  Its a great weight-loss tool though better than stomach stapling or banding.  One of the guys I knew who caught it up in the Boundary waters lost 50+ lbs ....thought he had cancer!  Pickled herring(caught in the ocean) is safe though... a staple while icefishing.
