CHEESEY POTATOES

(1/1)

Joe in T.C.:
Popular side dish for potlucks and holidays.

what you will need:
(2) 20oz. bags Simply potatoes fresh hashbrowns
(1)can Campbell’s cream of mushroom soup
16oz. Sargento shredded cheddar cheese
8oz. Philadelphia cream cheese (room temperature)
8oz. Velveeta cheese(room temperature)
(1) 1oz. envelope Lipton dry French onion soup mix
1tsp garlic powder
1tsp onion powder
1tsp black pepper
1TBS dry parsley flakes
About two tablespoons of vegetable oil
Greased 9x13 baking pan
350ﹾ preheated oven

Topping:
1 cup crumbled CHEEZ-ITS
1 cup French’s crispy fried onions
½ cup melted butter

Add hash browns with vegetable oil and parsley flakes to your pan over med-high heat.

Cook hash browns on both sides until golden brown (I do two batches since my pan is not large enough to cook them all at once)

Place 1st batch of hash browns in a large bowl, add all of the ingredients except cheddar cheese and the topping

Add the second batch of hash browns on top and let sit for a few minutes to soften cheese

Carefully mix together

Add cheddar cheese

Carefully fold into mixture

Add mixture to greased 9x13 baking dish and evenly spread out.

Mix fried onions and CHEEZ-ITS together and pour melted butter over top. Mix until they are well coated.

Evenly add topping over potato mixture

Bake uncovered at 350 degrees for 50 minutes to an hour or until hot and bubbly.

Makes a great side dish

Enjoy!

Man that's right up my alley.  I'm a try it this week.  With some smoked andouille sausage and collards w/ ham hocks bet I get full.

And as Grampa used to say, "If you eat that every day you'll never get old...  You'll die first..."

He lived to be 89 and ate bacon, eggs and buttered biscuits for breakfast with a gallon of coffee so strong you could stand the spoon up in it.  He also drank a half pint of Old Overholt and filled his pipe once or twice with "el Supremeo" on the front porch of an evening.

He'd still be alive, I bet, but about ten years ago he went out to the back house one night and the hogs ate him...
