BAKED FISH

I was wondering if any one has some good baked fish recipes. I'm looking for recipes for perch, walleye, gills, crappy,and cod. Trying to loose weight and don't want all that batter and don't want to give up my fish. Thanks all. :tipup: :icefish:

One of my fishing buddies used to lay them on a cookie sheet, sprinkle with saltnpepper, and put a little white wine on the bottom of the sheet. Not enough to submerge them, just a little. Bake in oven. I would say that must cut the calories a little. (No oil)

I have a recipie I like to use sometimes when I don't want to fry the fish.

 Pre-heat oven to 400
 put a little olive oil in a casserole dish
 place fish filets in the dish
 in a bowl,mix 1 or 2 cans diced tomatoes(drained),1/2 cup diced onions,2 or 3 garlic cloves minced,a little thyme,and a tablespoon of olive oil
 mix and spoon over fish
 sprinkle with bread crumbs and parmesean cheese
 bake uncovered 15 to 20 minutes or until fish flakes

I have used crappie,perch and walleye fillets
Its one of my favorites- Enjoy

There was a good fishcake recipe in the In-Fishermen that I liked.

8oz (1/2 pound) walleye, cooked
1 1/2 c mayo
4 eggs
1 c cooked wild rice
1/2 c shredded Parmesan Cheese
4 green onions, chopped or 1/4c chopped yellow onion
1tsp garlic powder or 1 clove fresh garlic
1 package saltine crackers
2 tsp seasonongs (salt,pepper,herbs)
2 tbsp oil or butter

Cook the walleye in simmering water until the flesh is firm, about five minutes, then cool
In a large bowl combine the walleye(flaked)mayo,rice,chopped onion,garlic, and cheese. Add eggs and mix with a fork
Add the seasonings
Crush the Saltines and fold into the batter until its firm enough to form into cakes
Heat oil or butter in a skillet over medium-high heat, cooking the small (2-4oz) cakes for 2 to 3 minutes on each side or until golden brown.

Serve with Blue Cheese aioli
   Combine 1/2c mayo, 1 tsp garlic powder and 1 oz crumbled blue cheese

This is what I like for gills.

Cook 5 slices of bacon, when cooled, crumble them.

Cut hot pepper cheese into strips. (2-3 of processed slices). Set both of these aside.

Spray glass pan w/ Pam, etc., lay fillets in 9x13 pan, sprinkle w/ Tony's.
Bake for 5 minutes. Remove from oven, turn oven to broil -LOW-.
DO NOT TURN FISH OVER, sprinkle bacon on fillets, then place cheese strips over that.
Place back into oven, for 4 mins.
Cheese will melt and turn smokey brown.
Thin fillets are best. serves 2.
Add your favorite sides.

I like to wrap my fish in foil, along with fresh dill and orange slices, a little salt and pepper and your good

I've had good results with using mayo & milk in place of an egg wash as a binder when breading fish for frying or baking.  Fat Free Mayo works just as well when baking and skim milk will help cut the calories.  I wait to turn on the oven until I have the fish ready so the breading has a chance to setup.

1. Lightly spray a baking dish with Pam (I prefer olive oil flavored).
2. Pat fillets with papertowel to remove excess moisture.
3. Dredge all of the fillets in seasoned flour (Tony's works great) & set aside.
4. Mix a little fat free Mayo with skim milk to a light cream consistency.
5. In a seperate dish, mix Panko crumbs with a little Parmasean cheese.
6. Dip floured fillets into milk mixture letting the excess drip off (very important).
7. Dredge wet fillets in panko crumbs and place in baking dish.
8. Lightly spray top of breaded fish with PAM.
9. Heat the oven to 400 now.
10. Bake until browned and crispy on the outside but still moist on the inside.

Tastes great with little squeezed lemon over the top.

Oh...those were walleye. It's also very good with crappie and cold water largemouth fillets.

Kill some of those bass this winter and try it out ;D
