Panko recipes wanted please

Hey Folks,
I've noticed a few people on this site who like to use Panko bread crumbs.
Can you guys share a recipe or two please. I found a local store that carries it and thought I would give it a try. I am always open to other suggestions but I'd like to give this stuff a whirl.

Rinse the fillets and pat them dry.

Shake in seasoned flour (or Drakes)
dip in egg wash (beaten eggs with a little milk)
roll in panko crumbs and fry!

Mix 1/3 reg. fine bread crumbs and 2/3 panko with basil, thyme, garlic powder, seasoning salt and black or lemon pepper.
Dip fillet in milk , then flour, then egg wash and then cover in bread crumb mix. 

 Awesome!

I whisk the milk, an egg together, thus a single dip/ wash. I believe that I skip the flour dip, and go straight for the Panko.

The one thing to remember with panko is, it is much blander then bread crumbs, so you need to add season and or salt to give it flavour. They are much crunchier then normal breadcrumbs but can be lacking in flavor. the above idea of mixing the two would be helpfull for sure

I posted this in another thread looking for a low cal option.  Figured it fit here to.

I've had good results with using mayo & milk in place of an egg wash as a binder when breading fish for frying or baking.  It gives the fish a little sweeter flavor that's nice.  Fat Free Mayo works just as well when baking and skim milk will help cut the calories.  I wait to turn on the oven until I have the fish ready so the breading has a chance to setup.

1. Lightly spray a baking dish with Pam (I prefer olive oil flavored).
2. Pat fillets with papertowel to remove excess moisture.
3. Dredge all of the fillets in seasoned flour (Tony's works great) & set aside.
4. Mix a little fat free Mayo with skim milk to a light cream consistency.
5. In a seperate dish, mix Panko crumbs with a little Parmasean cheese.
6. Dip floured fillets into milk mixture letting the excess drip off (very important).
7. Dredge wet fillets in panko crumbs and place in baking dish.
8. Lightly spray top of breaded fish with PAM.
9. Heat the oven to 400 now.
10. Bake until browned and crispy on the outside but still moist on the inside.

Tastes great with little squeezed lemon over the top.

I have enjoyed using Panko these past months but I agree with a few of the above folks about it being bland and really crunchy. I find the stuff too crunchy to be honest so I mix it with seasoned flour with great results.
