you don't need the bead. The only reason I use one is for something to grab while tying knots. It takes a lot of force to put a knot in 50 pound fluorocarbon.

Just tied one up, easier and quicker, still off a 1/4". Must be the knot throwing it off a little or the nut throwing it off?
I wouldn't worry too much about the difference in length, you just have to adjust where you put the hooks in the bait.  Mine are sometimes a bit off, and I just hook the head first, then by the dorsal fin, hold it up and see how it hangs.  If its not level just move the hook by the dorsal until you get it how you want it to be...
